Kaab El-Ghzal .....Moroccan Cookies for Anna.....Happy Birthday!!



Today's is Anna's Birthday!!......and knowing that she likes Morocco,  I want to celebrate her B'day  sharing some cookies from Morocco, along with some tea and saffron sugar........




Kaab El-Ghzal (adapted from the book Culina Mundi)

Dough

250 grams all purpose flour (sifted)
1 egg
1 tablespoon of butter
1 tablespoon of orange blossom water (I used rosewater)
Oil to work the surface (I used olive oil)

Filling

500 grams of almonds
250 grams of sugar
1 1/2 tablespoon of butter (melted)
1 tablespoon of orange blossom water (I used rosewater)
1 lemon (zest)

In a large bowl, place the flour, melted butter, egg white, and rosewater. Mix it well, and knead it. If you need, then you can add more water (I did not needed). Divide the dough in 4 pieces, and let it rest over an oiled surface.

Put the almonds in a food processor, and grind them. Add the sugar, butter, lemon zest. Continue grind them until it has a fine consistency. Add  the egg yolk, and  rosewater. Mix it well. Knead this mix, and make small ovals.

Flatten a piece of dough very fine. Cut it in circles. Fill it with the almond filling, and close it. Bake it for 15-20 minutes at 160C. Cool it, and pass it on icing sugar. Cool them......ENJOY!!

If you can, then eat it having Moroccan tea......
