Soupe au Pistou ....Sopa de Verduras con Pesto .... Una sopa deliciosa y asequible ...



Es triste escuchar que las dificultades económicas no están permitiendo a la gente a comer bien. Creo que tenemos una obligación moral y ética de contribuir no sólo con recetas sabrosas, sino también asequibles.

Espero que esta crisis económica termine pronto, y que todo el mundo pueda vivir en paz ....

Esta es una sopa francesa muy asequible y sabrosa. Por lo que yo sé, se trata de una sopa de Provence. Si usted no puede permitirse  hacer pesto de albahaca, puede hacer un majado perejil y ajo .. es también delicioso.

Yo use lo que tenia en la nevera .....

Soupe au Pistou

1 taza de frijoles rojos (cocido)
1 taza de judías verdes
2 papas (yo usé batata) en cubitos
3 zanahorias (en cubitos)
3 calabacines (en cubos)
2 tomates (aplastado)
1 cebolla (yo tenía una puerro)
150 gramos de pasta (yo usé 150 gramos de garbanzos cocidos)
150 guisantes verdes (no está incluido en la receta original)
1 litro de caldo de verduras
aceite de oliva
Sal y pimienta

En una olla calentar el aceite, de oliva y saltear el puerro. Añadir las judías verdes, patatas, zanahorias / batata y zucchini.


Adoro el puerro!!

Agregue los tomates y sazonar con sal y pimienta. Cocine durante 5 minutos a fuego medio. Añadir el caldo de verduras y llevar a ebullición. Agregue los frijoles, pasta (garbanzos), y los guisantes verdes.



Se deja hervir durante 15 minutos a fuego medio. Servir con una cucharada de pesto de albahaca o perejil majada. Mezclar ..... DISFRUTE!

It is sad to hear that the economic difficulties are not allowing to people to eat well. I think we have a moral and ethical obligation to contribute not only with tasty recipes, but affordable as well.

I hope this economic crisis will end soon, and that everybody may leave in peace....

This is a very affordable and tasty French soup. As far as I know, it comes from Provence. If you cannot afford to make pesto basil, you can crash parsley and garlic together...it is also delicious.

I used what I have in the fridge.....

Soupe a Pistou

1 cup of red kidney beans (cooked)
1 cup of green beans 
2 potatotes (I used yam) diced
3 carrots (diced)
3 zucchini (diced)
2 tomatoes (crushed)
1 onion (I had 1 leak)
150 grams of pasta (I used 150 grams of chickpeas cooked)
150 green peas (is not included in the original recipe)
1 liter of vegetable broth
Olive oil
Salt and pepper

In a pot, heat olive oil and sautee the leak. Add the green beans, potatoes/yam, carrots, and zucchini. 

I love leeks!

Add the tomatoes, and season it with salt and pepper. Cook it for 5 minutes at medium heat. Add the vegetable broth, and bring it to boil. Add the beans, pasta (chickpeas), and green peas.



 Let it boil for 15 minutes at medium heat. Serve it with a spoon of Basil pesto or Parsley majada. Mix it.....ENJOY!

Pastel de Pera y Queso de Cabra y Pie de Alcachofa

Me encantan las peras, son dulces, sabrosas, elegantes, y van bien con las especias que más me gustan, como el anís estrellado, canela y clavo de olor.

Tuve algunas peras en el fondo de la nevera, junto con un trozo de queso de cabra ..... y aquí está el resultado!

Pastel de Pera y Queso de Cabra

3 peras maduras (pero firme)
70 gramos de almendras
2 cucharadas de azúcar + 1/4 taza de azúcar
1 taza de harina
2 cucharadas de aceite de oliva
2 cucharadita de polvo para hornear
100 gramos de queso de cabra
1/2 vaina de vainilla
1 cucharadita de esencia de vainilla
1 cucharadita de esencia de almendras
leche
especias: canela, clavo de olor, anís estrellado

Pelar las peras. Colocarlas en una olla con especias y 1/4 taza de azúcar. Apenas cubrirlas con agua hasta la mitad. Cocinar durante 3-4 minutos (tienen que estar firmes). Sacar las peras. Reducir el agua hasta que tenga una consistencia de un jarabe. Deje que se enfríe.

Moler las almendras, y mezclar con la harina. Separar las claras de las yemas. Batir las claras de huevo hasta que se formen picos. Batir las yemas con el azúcar hasta que esté cremosa. Añadir el aceite de oliva, el queso de cabra y semillas de vainilla. Agregar la esencia de vainilla y almendra. Incorporar la mezcla de la harina y la almendra, y la levadura en polvo. Si es necesario, añadir un poco de leche (como 2 cucharadas). Incorporar las claras batidas con movimientos lentos.

Engrasar y enharinar una cazuela. Coloque una pera en el medio, y la rodea con la mezcla. Cocine na horno precalentado a 380-390 F durante 30 minutos o hasta que esté completamente cocido. Antes de servir, hacer algunos agujeros con un palo de bambú y humedecer con el jarabe. Disfrutar!



¿Recuerda cuando hice el pastel de champinones y puerros? Hice el mismo pastel , y en vez de setas  he usado para el relleno 70 gramos de almendras en rodajas, y lo decore con aceitunas. Además, he utilizado la misma masa para un pastel de alcachofa.





Pie de Alcachofa 

10 alcachofas (yo uso los corazones congelados)
½ cebolla picada
2 dientes de ajo picados
100 ml de leche
3 cucharadas de aceite extra virgen de oliva
60 g. de queso parmesano reggiano
110 gramos de queso en cubitos. He utilizado un trozo de emmental que tenía en la nevera.
3 huevos
sal
orégano
Perejil (si desea)

En una sartén, saltear la cebolla y el ajo por 2 minutos. Saltear las alcachofas, y añadir agua para cocerlas hasta que estén tiernas. Deje que se enfríe.

Batir la leche y los huevos. Sazonar con sal, orégano, perejil y parmesano. Añadir esta mezcla a las alcachofas.

Después de haber preparado la masa durante 15-20 minutos, como en el post anterior, se saca del horno, distribuir el queso en dados, la mezcla de alcachofa sobre el queso, y cocine hasta que esté completamente cocido. DISFRUTA!

Pear and Goats Cheese Cake and Artichoke Pie

 

I love pears, they are sweet, tasty, elegant, and goes well with spices that I like such as cinnamon  star anise, and cloves.

I had some pears in the back of the fridge, along with a piece of goat's cheese.....and here is the result!!

Pear and Goats Cheese Cake

3 pears (ripe but firm)
70 grams of almond
2 tablespoons of sugar + 1/4 cup of sugar
1 cup of flour
2 tablespoons of olive oil
2 teaspoon of baking powder
100 grams of goat's cheese
1/2 bean of vanilla seeds
1 teaspoon of Vanilla essence
1 teaspoon of Almond essence
Milk
spices: cinnamon, cloves, star anise

Peel the pears. Place them in a pot with spices, and 1/4 cup of sugar. Barely cover them with water half way. Cook them for 3-4 minutes (they have to be firm). Take the pears out. Reduce the water until you have a consistency of a syrup. Let it cool.

Grin the almonds, and mix it with the flour. Separate the egg whites from the yolks. Beat the egg whites until it form peaks. Beat the yolks with the sugar until it is creamy. Add the olive oil, the goat cheese, and vanilla seeds. Add the vanilla and almond essence. Incorporate the mix of flour and almond, and the baking powder. If necessary, then add a little bit of milk (like 2 tablespoons). Incorporate the beaten egg whites with slow movements.

Grease and floured a  ramekin. Place a pear in the middle, and surround it with the mixture. Cook it n a preheated oven at 380-390 F for 30 minutes or until fully cooked. Before serving, make some holes with a bamboo stick, and moist it with the syrup. ENJOY!

Remember when I did the Mushrooms and Leek Pie? I did the same pie, and instead of mushrooms I used for the filling 70 grams of sliced almonds, and decorated it with olives. In addition, I used the same dough for an artichoke pie.




Artichoke Pie


10 artichokes (I use frozen hearts)
½ onion chopped
2 cloves garlic chopped
100  ml milk
3 tablespoons extra virgin olive oil
60 g. grated parmigiano reggiano
110 grams of cheese cubes. I used a piece of emmenthal that I had on the fridge.
3 eggs
Salt
Oregano
Parsley (if desire)

In a pan, sautee the onion and garlic. Sautee the artichokes, and add water to cook them until they are tender. Let it cool.

Beat the milk and eggs. Season it with salt, oregano, parsley, and parmiggiano. Add this mixture to the artichokes.

After you have cooked the dough for 15-20 minutes as in the previous post, take it out from the oven, distribute the diced cheese, the artichoke mix on top, and cook it until is fully cooked. ENJOY!!

Baighan Bharta (Dip de Berenjenas) y Dip de Lentejas.....




Me encantan los dips y salsas vegetarianas para el picoteo, y desde que llegué a Canadá, he ido descubriendo la belleza de los granos y las verduras de otra manera.

Baighan Bharta (dip de berenjena estilo indio)

2 berenjenas
1/2 cebolla (picada)
1 diente de ajo
1 trozo de jengibre de 2 cms (rallado)
½ cucharadita de semillas de cilantro (molido)
½ cucharadita de comino (molido)
¼ cucharadita de cúrcuma
3 cucharadas de aceite de oliva
Chile en polvo
pimentón ahumado
1 cucharada de hojas de menta (picado)
1 cucharada de cilantro (picado)
1 cucharada de jugo de limón
4 cucharadas de yogur griego
4 cucharadas de queso crema
aceite de oliva

Cortar la berenjena en cubos. Agregar sal  y dejar durante 30 minutos. Lavar y cocer en agua hirviendo hasta que esté completamente cocido. Escurrir la berenjena para eliminar el agua.

En una sartén, caliente el aceite de oliva y cocine la cebolla hasta que esté transparente. Agregue el ajo y el jengibre y cocine por 3 minutos. Incorporar la cúrcuma, el comino y el cilantro. Añadir la berenjena y mezclar bien. Añadir el yogur, el queso crema, chile y paprika. Sazonar de sal. Si lo desea, entonces usted puede hacer puré las berenjenas con un tenedor (yo no lo hice). Agregue el jugo de limón, menta y cilantro. Mezcle bien y sirva tibio.





Después de hacer el dip de berenjena, y degustar el sabor de la combinación de  yogur / queso crema, hice la siguiente pasta con unas lentejas sobrantes cocidas.

Dip de Lentejas

1 taza de lentejas cocidas
sal
1 cucharadita de jugo de limón
1 cucharadita de comino molido
aceite de oliva
1 diente de ajo (picado)
3 cucharadas de yogur griego
3 cucharadas de queso crema
Chile en polvo
Cebollas verdes (picadas)

En un procesador de alimentos, moler las lentejas (se puede usar un poco de agua). En una sartén, caliente el aceite de oliva a fuego medio y agregue el ajo. Cocine durante 1 minuto y agregue el comino hasta que esté fragante. Incorpore las lentejas, y revuelva bien. Añadir el yogur y el queso crema. Sazonar con sal y chile en polvo. Agregue el jugo de limón y servir con aceite de oliva y las cebollas verdes. Mezclar. DISFRUTE!



Durante el verano, probamos esta  Brocheta the Tomates, Mozarella y Pesto , la cual hice con tomates uva y boconccini ... es una gran idea y seguro que se repetirá durante esta Navidad debido a los colores .... Gracias  Sofia!!

Baighan Bharta and Lentils Dip.....



I love veggie dips, and since I came to Canada, I have been discovering the beauty of grains and veggies in another way.

Baighan Bharta (Eggplant dip Indian style)

2 eggplant
1/2 onion (chopped)
1 garlic clove
1 piece of ginger (grated)
½ teaspoon  coriander (crushed)
½ teaspoon  cumin (crushed)
¼ teaspoon turmeric
3 tablespoons olive oil
Chili powder
Smoked paprika
1 tablespoons mint leaves (chopped)
1 tablespoons cilantro(chopped)
1 tablespoons lemon juice
4 tablespoons of Greek yogurt
4 tablespoons of cream cheese
Olive oil

Cut the eggplant in cubes. Salt it, and leave it for 30 minutes. Wash it, and cook it in boiling water until fully cooked. Drain the eggplant to remove water.

In a pan, heat the olive oil, and cook the onion until translucent. Add the garlic and ginger, and cook it for 3 minutes. Incorporate the turmeric, cumin, and coriander. Add the eggplant, and mix it well. Add the yogurt, cream cheese, chili, and paprika. Season it for salt. If you want, then you can mash the eggplant with the fork (I didn’t do it). Add the lemon juice, mint and cilantro. Stir it well, and serve it warm.



After I made the eggplant dip, and taste the yogurt/cream cheese combination, I made the following dip with some leftover cooked lentils.

Lentil Dip

1 cup cooked lentils
Salt
1 teaspoon of Lemon juice
1 teaspoon of grounded cumin
Olive oil
1 garlic (chopped)
3 tablespoons of Greek yogurt
3 tablespoons of cream cheese
Smoke chili powder
Green onions (chopped)

In a food processor, mash the lentils (you can use a little bit of water). In a pan, heat olive oil at medium heat, and add the garlic. Cook it for 1 minute, and add the cumin until it is fragrant. Incorporate the lentils, and stir it well. Add the yogurt, and cream cheese. Season it with salt, and chili powder. Add the lemon juice, and serve it with olive oil and green onions. Mix it. ENJOY!


Over the summer, I enjoyed this Brocheta the Tomates, Mozarella y Pesto , but I did it with grape tomatoes and boconccini...it is a great idea and for sure will be repeated over this Christmas because of the colors....Thanks Sofia!!

Diwali....y Sorteo......Diwali and a Raffle!!



El tiempo vuela, y hemos celebrado Diwali nuevamente. En Diwali, o Festival de las Luces, se ha celebrado no sólo nuestra luz interior, sino también la victoria del bien sobre el mal.  Las velas y las lámparas se encienden para mostrar la belleza de este mundo, y reconocer que la luz es un don de Dios.

Como regalo, he recibido dulces indios, kheer (arroz con leche y azafrán), y un dulce especial Indio llamado Soan Papdi que una amiga me trajo de la India la semana pasada.Yo hice de regalo mis biscottis.







Porque es tiempo para compartir y recibir, y estamos tan cerca de Navidad, estoy haciendo un sorteo con dos premios. Cada premio tiene una bota de Navidad, una caja de té, y un conjunto  polvos orgánicos de espinacas y remolacha.

ENGLISH VERSION:

Time flies, and we have celebrated Diwali again. In Diwali, or the festival of lights, we have celebrated not only our inner light, but also the victory of good over evil. Lights. Candles and lamps are lighted to show  the beauty of this world, and to recognize that light is a gift of God.

As a present, I have received Indian sweets, Kheer (Indian rice and milk with saffron), and a special Indian treat called Soan Papdi that a friend brought me from India last week. I made and gave as a present my biscottis.


Because it is time for sharing and receiving, and we are so close to Christmas, I am making a raffle with two awards. Each award has a big stocking, a box of tea, and a set of spinach and beet organic powder.

Tarta de Albaricoques (o Arándanos) de Pierre Hermé




Cuando tuve mi locura por los Macaron, encontré en Google una Tarta de Almendra y Albaricoque de Pierre Herme. Fue amor a primera vista......Tenía mis últimos albaricoques de las estacion en la nevera .....



Encontré la receta en el excelente blog de Valerie Cuisine  Merci Valerie!


He hecho esta tarta dos veces, primero con albaricoques luego con arándanos .. La primera tal y como lo instruye la receta,  la segunda vez con una crema pastelera de vainilla que tiene menos de yema de huevo. Lo hice con mi crema pastelera de vainilla regular, y yo no encontre diferencias en el gusto con el primero. Creo que la clave es la combinación de la crema de almendras con crema de vainilla que hace una textura aterciopelada. Es decir, se puede obtener el mismo resultado sin poner tanto huevo.







Tarte aux Abricots (o Arandanos) de Pierre Hermé



250 g de masa de hojaldre (ojala casero)
180 g de crema de almendras  (ver receta a continuación)
1,1 kg de albaricoques maduros
4 cucharadas de mermelada de albaricoque

Para la crema de almendra
 135 g de mantequilla
 165 g de azúcar glas
165 g de almendra en polvo
 10 g de almidón de maíz
 1 cucharada de ron (yo no use)
 2 huevos
 300 g de crema pastelera (ver receta a continuación)

Para la crema pastelera (receta original)
 1/2 litro de leche entera fresca
 45 g de almidón de maíz
 125 g de azúcar en polvo
 6 yemas de huevo
 50 g de mantequilla
 2 vainas de vainilla

Preparar la crema pastelera mezclando la maicena con el azúcar (la mitad) y la leche, y poniendo a calentar sin dejar de revolver.  Dividir la vaina de vainilla y raspar el interior con un cuchillo , agregar a la mezcla y revolver hasta que tome consistencia. Agregar la mantequilla.

En un bol,  batir las yemas de huevo con el azúcar restante hasta que este blanquecino. Agregar de a poco a la crema anterior, y llevar nuevamente a ebullición. Retirar del fuego inmediatamente y enfriar.

Cuando la crema pastelera se haya enfriado, preparar la crema de almendras: Mezclar el azúcar en polvo,  almendra y la maicena. Poner la mantequilla en un bol y mezclar con una espátula para que se ablande. Cuando la mantequilla tiene la consistencia deseada, añadir la mezcla de almendra, azúcar, almidón de maíz. Incorporar los huevos (de a uno) revolviendo constantemente con una espátula hasta que se incorpore por completo. Agregar 300 g de crema pastelera fría. Cubrir con papel film y refrigerar hasta que esté listo para su uso.

Estirar la masa de hojaldre y forrar un molde de horno (en mi caso es un molde de 26 cm de diámetro). Pinchar la parte inferior con un tenedor y poner en la nevera durante 30 minutos.

Precaliente el horno a 185 ° C. Cocinar la masa sin relleno, cubierta con papel de horno y legumbres secas durante 14 minutos a 185 ° C. Retire el papel y cocine nuevamente por 5 minutos hasta que la masa esté ligeramente dorada.

Rellenar con la mezcla de crema de almendras y pastelera. Cortar los albaricoques como desee (o arandanos) y disponer sobre la crema. Llevar al horno por 30-40 minutos (la prueba del palito) hasta que este cocido y la fruta dorada. Al sacar del horno, pincelar con la mermelada de albaricoques.....DISFRUTE!
