Chinese New Year Recipes


"Guo Nian Hao", which means "Happy New Year" is the Lunar New Year that it is celebrated in many Asian countries. It is a time to meet with family, decorate the house with red ornaments because the red color attracts happiness, wealth and prosperity as well as warding off evil spirits and bad luck.




Simple meals are prepared, and more time is enjoyed with the family!


Kaiyang Cabbage

  • 50 grams dried shiitake mushrooms sliced and soaked in warm water
  • 3 garlic cloves
  • 2 tablespoons of olive oil
  • 30 grams  dried shrimp
  • 450 grams cabbage leaves, cut into pieces
  • 2 carrots, thinly sliced rounds
  • salt and pepper
  • 2 pinches ground white pepper
  • 1 tsp corn starch
  • 2 tbsp water
  • sesame oil

Sautee garlic in olive oil. Add the shrimps and mushrooms and saute for 3 minutes. Add cabbage, carrots, salt and pepper. Cook it for 7 minutes. Mix watr with corn starch, and add it to the vegetable mix. Cook it for 3 minutes. Serve it warm and add sesame oil on top.

Dumplings

This time I bought the dumplings wrapper....

Filling
12 g fresh root ginger peeled and chopped
    6 spring onions sliced 
      180 g  raw prawns peeled and deveined
        2 tablespoons of sesame oil
          2 tablespoons rice wine
            2 tablespoons soy sauce

              Mix everything in a food processor. Put a teaspoon in a center of a dumpling wrapper. Fold it and steam it over a carrot slice. Serve it with your sauce of choice. I like soy sauce with some hot sauce.




              Noodles with Shrimps (noodles are for longevity)

              150 grams  rice vermicelli
              250 grams of jumbo shrimp, raw, peeled, deveined
              4 tablespoons sesame oil
              4 garlic cloves chopped
              1 small piece of ginger chopped
              2 green spring onions chopped
              Salt
              Soy sauce

              In a pan, heat 2 tablespoons of sesame oil. Add the garlic, ginger, and spring onions. Add the shrimps and cook them. In boiling water, soak the vermicelli according to instructions. Drain the vermicelli, and mix it with the shrimps. Add soy sauce and the remaining sesame oil. Enjoy
