Spinach gnocchi


What to do with 3 medium size potatoes and some spinach? GNOCCHI!

Sometimes we have ingredients  in small quantity that needed to be transformed to have a nice meal.

Spinach gnocchi

3 medium size potatoes
150-200 grams of spinach
1 egg  
Flour 00 or semolina as needed

Peel and boil the potatoes. Let it strain all the water (1 hour for me), and smash them.  Cook the spinach, and let it drain all the water (about 1 hour). 

In a mini blender, blend the spinach with the egg. Mix it with the mash potatoes. Add flour or semolina as needed (I used 1 tablespoon of each until I found a good dryness of the dough).

Form a long roll with your hands and cut them in pieces. Form them with a gnocchi mold or the back side of the fork,

Boil them, and when they float, place them in tomato or sauce of your choice, Serve it with grated cheese and chili flakes. Enjoy!
