Brioche bread filled with feta and herbs



I still have flour!....flour is getting difficult to find here, let's hope that we will soon come back to normal.

I have some fresh herbs , and a piece of feta cheese, and I tried these filled brioche that I served with a vegetable frittata and tomato salad. This bread is delicious!
 



 Dough
140 ml of warm milk 140 ml lukewarm water 1 teaspoon dry instant yeast
2 tablespoons of starter sourdough 1 teaspoon of sugar sugar 10 grams of salt 1 egg 15 grams olive oil 500 grams of flour
75 grams boiled potatoes

Filling
1 egg
Parsley, mint, basil, oregano, dill
120 grams of feta cheese
1 tablespoon of milk

For the filling mix all the ingredients.

Dough
Mix the water and milk with the sugar and yeast, Let it foam for 10 minutes. Add the starter, egg, and olive oil. Incorporate the flour and salt, and mix it until you have a soft dough. Let it rise for 2 hours. Divide it in 8 pieces (balls). Let it rest for 15 minutes. Roll it in a rectangle shape, and place a tablespoon of filling. Roll it 3/4 of length. With a scissor, cut lines, and fold them in opposite sides. Let it rest for 1 hour. Brush it with an egg, Bake it at 375F for 20 minutes or until golden brown. They are delicious!














We ate it with a frittata
