Focaccia Rosemary Onion Garlic and Potatoes






If there is something that we know now, is that some extra kilos have been accumulated in our bodies during this quarantine.....let's keep eating!

Focaccia Rosemary Onion and Potatoes

240 g of water 
400 g of flour 
100 grams mashed potatoes (cold)
1 teaspoon of sugar 
5 g of instant dry yeast 
2 tablespoons of sourdough starter
3 teaspoons of oregano 
40 g of olive oil
 1 teaspoon of salt 

1 onion
3 cloves of garlic
4 potatoes
rosemary

Chopped the onion and garlic, and sautee them. Let it cool.
Slices the potatoes and slice them. Sautee them. Let it cool.
Wash and chop fresh rosemary or another herb.

Mix water, sugar, and yeast. Let it foam for 10 minutes. Mix all the remaining ingredients, and add the foamy yeast. Mix it for 10 minutes. Let it rise for 1 hour, and punch it down. Let it rise for another hour. With greasy hand, place it on a oven proof tray. Sprinkle with olive oil, salt and rosemary. Arrange one line of potatoes, and one line of onion/garlic. Bake it in a preheated oven at 375F for 25 minutes or until golden brown. ENJOY!

I found strawberries the last day I went to shop for groceries before the quarantine....I could'n resist to buy them for a good pastry!
