Bread filled with Pesto

 





I love pesto....I love any type of food, but pesto is in my roots since my Nonno was from Rapallo, Liguria. As usual, I planted basil this year for salads, pizza, sandwich and pesto. However, I'm having so much basil that I don't know what else to do!!!!.....I'm making pesto and freeze it for winter. 

I made this pesto bread, and it was delicious

Bread filled with Pesto

220 grams of water
350 grams bread flour
100 grams whole wheat flour
1/2 teaspoon instant yeast
2 tablespoons sourdough
2 tablespoons powder milk
1 teaspoon of salt
1 egg

Mix all dry ingredients, and add the water, sourdough and egg. Knead them for 10 minutes. Let it rise for 90 minutes. With a roller pin, make a rectangle, and fill it with pesto. Roll it, and make a U shape. Twist it, and let it rise for another 60 minutes. Brush it with olive oil, and sprinkle it with parmiggiano grated cheese. Bake it at preheated oven at 375F for 20 minutes or until golden brown. Enjoy!
