Lentils and ACQUACOTTA....




I love lentils....seriously....I love lentils so much that I eat them everyday......lunch for me is always lentils....dinner is any other dish..

This is a recipe that can be modified as you wish; however, the mix of spices makes this lentils delicious!!

Lentils

1 onion chopped
4 carrots in pieces
1 red bell pepper in pieces
1 yellow bell pepper in pieces
250 grams of swiss chard
3 garlic cloves chopped
salt pepper olive oil
1 teaspoon turmeric
1/2 teaspoon smoked paprika
1/2 teaspoon hot paprika
1 teaspoon grinded cumin
1/2 teaspoon cinnamon
oregano
3 tablespoons of home made tomato paste
1.5 cup of washed and soaked lentils. I used a combination of 1/2 cup of red lentils, 1/2 cup of green lentils and 1/2 cup of brown lentils. Usually, I soak them for more than 1 hour.
3-4 cups of vegetable broth


In a pot, heat olive oil and stir fry the onion and garlic. Add all the veggies you want to add except the swiss chard. Add all the spices, and let it simmer for 7 minutes to release the flavors. Add the lentils, the broth, and the tomato sauce. Let it cook until lentils are cooked (30-40 minutes ?). Add the swiss chard and let it cook for 5 minutes. ENJOY!

  2. I like lentils and eat them occasionally. I prefer the red lentils over the brown. Your recipe looks delicious. Cinnamon looks interesting to me. I'll have to give the recipe a try.

  3. Your recipe looks divine! I'm a massive fan of rural legumes dishes and I often cook stews and soups with beans, chickpeas and lentils and I absolutely need to try this one. I'm gonna publish a Tunisian beans soup soon :)
