Salmon Quiche and Beetroot leaves Quiche





I love quiches....for me it is a way to recycle veggies or leftovers....I love them in inter with a soup and in summer with a salad or barbeque veggies. When I bake quiches, I bake bread at the same time; thus, I can use the oven more efficiently.

Dough for 2 quiches (it depends how big are your quiche mold)

3 cups of flour
200 grams of butter cold and diced
1/2 teaspoon of salt
4-8 tablespoons of cold water as needed

In a food processor, mix all together except the water. Add the water by spoons until you have a quiche dough. divide it in two portions, and leave it in the fridge for 1 hour.

With a rolling ping flatten the dough. Place it in two quiche molds. Place parchment paper with some beans on top, and bake them for 25 minutes at 170 C. Take them out of the oven, and let them cool.


Salmon quiche

1 or 2 pieces of salmon leftover
120 grams of feta cheese. You can use more or less or a different cheese. That is the cheese I had at the moment.
4 eggs
1/2 cup of milk
pepper
dill
3/4 cups of cooked green peas
60 grams parmiggiano reggiano grated cheese

Place the salmon in pieces on the mold. Place on top the green peas, and the feta cheese. Mix the eggs and milk and season it with dill and pepper. Place this mix on top of the salmon, and on top add the parmiggiano reggiano cheese. Bake it at 365F until is set (place a knife inside and it should come up fry).....ENJOY!



 


Beetroot leaves Quiche

Leaves of 6 beetroots
120 grams of feta cheese. You can use more or less or a different cheese. That is the cheese I had at the moment.
4 eggs
1/2 cup of milk
pepper
oregano
olive oil
3 garlic cloves
60 grams parmiggiano reggiano grated cheese

Wash and chop the beetroot leaves. Sautee the them with garlic and olive oil, and when they are cooled placed them on the mold. Place on top the feta cheese. Mix the eggs and milk and season it with oregano and pepper. Place this mix on top of the beetroot leaves, and on top add the parmiggiano reggiano cheese. Bake it at 365F until is set (place a knife inside and it should come up fry).....ENJOY!

  3. I am fond of both salmon and quiche but I have never combined the two. Perhaps its time to do so!

  5. Such a healthy and flavorful looking quiche. I love the idea that you used the beetroot leaves. So many people discard them and only eat the beet itself.
