Chow mein noodles

I love Chinese food....However, I love Chinese food outside China....I never found a good restaurant in Mainland China, except one seafood restaurant in Hangzhou that was delicious....A Chinese friend me told me that there is no unique chow mein recipe, and is all about creativity...

I love noodles with lots of veggies....and here is my version of chow mein noodles

Chow mein noodles

I don't have specific amount of each ingredient since I use what I have in my fridge

mushrooms: cremini, oyster and dry shiitake. I soak (1 hour) and boil the dry shiitake for 15 minutes before using them.
dry shrimps (previously soaked) and fresh shrimps
broccoli, snow peas, carrots, red bell pepper, orange bell pepper
purple onions, garlic, ginger, green onions
3 eggs beaten
Noodles Cantonese style

For the sauce
1 tablespoon fish sauce
2 tablespoon of dark soy sauce
2 tablespoon of oyster sauce

Prepare all the ingredients in terms of size

In a hot wok with oil fry some ginger and garlic, then sautee the mushrooms. Set aside.

In a hot wok with oil, make scrambles eggs. Set aside.

Boil and cook the noodles as per package direction. Set aside.

In a hot wok with oil, fry the red onion with the remaining garlic and ginger. Add the Cantonese noodles, and the green onions. Add the sauce, and stir them. Incorporate all the remaining cooked ingredients. ...ENJOY!!

  2. I have not visited Mainland China but the food in Hong Kong and Taiwan was excellent. We frequently eat Asian-inspired food at home. Last evening we had a shrimp stir fry - quick, tasty and nutritious.
