Nepaleses



I have no idea the name of these quiches, but at home we called them "Nepaleses" since we tried them there for the first time. In Kathmandu, they are street food, very affordable, spicy, and served warm for the cold Kathmandu days.

I make it many times trying to replicate their taste:

Nepaleses

Dough

300 grams of all purpose flour

125 grams of butter

1/2 teaspoon of baking powder

1/2 teaspoon of salt

Cold water as needed

Mix all the ingredients, and leave it in the fridge for 1 hour. Take them out of the fridge, and with a roller pin, flatten it, and make small tart molds. Bake them for 15 minutes in a preheated oven at 375F. Let it cool.

Filling adapt the spices to your taste

500 grams of spinach

1 teaspoon of gram masala

1 teaspoon of kashmiri chili powder 

1/2 teaspoon of fresh grinded cumin

1/2 teaspoon of fresh grinded coriander seeds

1/2 teaspoon of salt

120 grams of feta cheese in small pieces

olive oil

3 eggs

Wash, chop, and sautee the spinach in olive oil. Let it cool. Place the spinach in a bowl, add all the spices, the crumble feta cheese, the eggs, and mix them well. Fill the mini tart molds, and bake them for 15 minutes in a preheated oven at 375F, our until they are set. ENJOY!!
