Blinis and Mayonnaise

For the New Year, I always make blinis (the recipe is here). They are easy, fast, and we can put on top whatever we have in the fridge.

I found a local farmer who sells eggs. Since they are really fresh, I made home made mayonnaise. I'm not going back to grocery store mayonnaise!

Mayonnaise
1 whole egg
200 ml of good sunflower oil and 50 ml of olive oil
1 tablespoon of lemon juice or white vinegar
1/2 teaspoon of Salt

In a blender, place the whole egg, lemon or vinegar and salt. Mix it at constant low speed adding the oil. It should be ready in 2 minutes. Keep it in the fridge and use it in 2-3 days. ENJOY!

  2. That's exactly how I made my mayonnaise :-) Immersion blender is one of my kitchen gadgets. The blinis with smoked salmon are hard to resist!

    Besos.
