Ice cream in a jar (keto), keto/gluten-free scones and Italian baguette

 


I had to make some keto dishes, and I preferred to make something at home with known ingredients.

Ice cream in a jar

This is a very simple ice cream that can be made with sugar. The good part is that you don't need an ice cream maker.

12 grams of cocoa powder without sugar
260 ml whipping cream
3 teaspoons of Monk fruit sugar (or the sweetener of your choice)

Place everything in a glass jar. The jar size has to be big enough to make this mix a third of the jar.



With a hand blender, mix it until it has doubled in size. Place it in the freezer for 3-4 hours. Every one hour, mix it with a spoon. Serve it and ENJOY!


Scones Keto/Gluten-free

250 grams  of almond flour 
50 grams flaxseed meal 
1/2 teaspoon salt
2 teaspoons of baking powder
4 egg whites 
2 tablespoon apple cider vinegar 
200-240 milliliters of warm water. It will depends how soft you want them.

Mix all the dry ingredients. Beat the egg whites until they form picks. Add the vinegar and egg whites to the dry mix. incorporate water slowly until you have a desired consistency. With a ice cream scoop, place portions on a oven tray with parchment paper. Bake them at 165C for 20-25 minutes. 

Personally, I liked them. I think next time I will add sundried tomatoes, olives, or herbs.



Italian baguette

I needed a "fast bread", and I couldn't wait for 24 hours fermenting process.

350 g of bread flour white
150 g of freshly milled hard white wheat

450 g of water
2 teaspoons of instant yeast 
1/2 teaspoon of sugar
2 teaspoons salt

Mix 100 g of water with the sugar and yeast. Set aside for 10 minutes. Mix all the remaining ingredients together with the yeast mixture, and let it rise for 90 minutes or until doubles its size. 
Place it in the fridge for 1 hour. Divide it in two portions and shape it in a baguette style. Bake it for 25 minutes at 200C. ENJOY!
