Salmon, Shrimp, Onion and Cheese empanada


I love empanadas. They are tasty either warm or cold, and they are great to recycle food. I had a cooked salmon piece from last night, and along with some shrimps and onions, theyv were transformed in a delicious empanada.

Dough
500g of flour
1/2 teaspoon of salt
200g cold butter diced
1 egg
2 teaspoons of sourdough (optional)
1 teaspoon instant yeast (2 teaspoons if you don't use sourdough)
water

Mix all the ingredients, and add water slowly to have a smooth not sticky dough. Let it rise for 3 hours

Filling

1 piece of cooked salmon
9 shrimps
450 grams of onions in julienne
5 green onions chopped
1/2 package of white cream cheese (Philadelphia style)
5 slices of Havarti cheese
salt
pepper

In a pan with olive oil, cooked  the onions and green onions. Set aside. In another pan, cooked the shrimps. Set aside,

Divide the dough in two pieces. With a rollin pin, flatten one side and distribute pieces of white cream cheese, place on top the cooked onions, then distribute pieces of salmon and the shrimps. Place on top the havarti cheese. Close it with the other dough already flattened it. Brush it with olive oil. Bake it in a preheated oven at 165C for 20-30 minutes or until it is golden brown. ENJOY!!

  2. I don't think it gets much better than this, and I would bet that a can of salmon would work well too.
