Pasar la masa por una máquina de pasta hasta el número 6. Marca la forma de corazón para colocar el relleno. Coloca el relleno y cúbrelo con otra capa de masa. Estos raviolis son muy grandes; así, calcula 3 o 4 raviolis por persona. Coloca los raviolis en agua hirviendo durante 5-7 minutos hasta que floten.

Pan de pita
No he desaparecido....Sólo tenía invitados en casa, y por supuesto toda la atención era para ellos. Cuando tengo invitados no hago platos nuevos, solo repito lo que sé que les gustaría. Sin embargo, tenía una receta de pan pita que quería probar desde hacía mucho tiempo y era perfecta para disfrutar con hummus casero y otros platos.
Me encanto comer pan de pita fresco porque es diferente a los de supermercado. Hay dos opciones para cocinarlo: hornearlo en el horno o cocinarlo sobre una sartén de hierro fundido. Utilicé esta segunda opción para controlar el calor y la cocción. ¡¡Fue tan bueno verlo hincharse!!
Pan de pita
1 1/2 tazas de harina para todo uso
1/2 taza de harina integral
1 cucharadita de sal
1/2 cucharada de azúcar
1 cucharada de aceite de oliva
2 cucharaditas de levadura instantánea
1/2 taza de agua tibia
Más agua tibia si es necesario
Mezclar el azúcar con el agua y agregar la levadura instantánea. Deja que haga espuma.
Mezclar el resto de los ingredientes y añadir el agua espumosa. Necesitarás más agua, pero agrégala de a poco hasta obtener una masa suave. Amasar durante 10 minutos hasta que no se pegue a las manos.
Colóquelo en un bol y unte con aceite de oliva. Déjalo reposar durante 2 horas. Colóquelo en el frigorífico para que fermente lentamente durante la noche.
Dividir la masa en 10 trozos y dejar reposar durante 30 minutos a temperatura ambiente. Aplánelo cada uno con un rodillo. Cocínalo sobre un molde de hierro caliente y cámbialo de lado hasta que se hinche. ¡¡DISFRUTAR!!
Pita bread
I have not dissapeared....I just had guests at home, and of course all the attention went to them. When I have guests, I don't make new dishes, I just repeat what I know they would like. However, I had a pita bread recipe that I wanted to try for a long time, and it was perfect to enjoy with home made hummus and other dishes.
I loved to eat fresh pita bread because it was not chewy. There are two options to cook it: bake it in the oven or cook it over an iron cast pan. I used this second choice to control the heating and cooking of it. It was so good to see it puff!!
Pita bread
1 1/2 cups all purpose flour
1/2 cup whole wheat flour
1 tsp salt
1/2 tbsp sugar
1 tbsp olive oil
2 tsp instant yeast
1/2 cup of water
More warm water if needed
Mix the sugar with water, and add the instant yeast. Let it foam.
Mix the remaining ingredients, and add the foamy water. You will need more water, but add it accordingly until you have a soft dough. Knead it for 10 minutes until it doesn't stick to your hands.
Place it in a bowl, and brush it with olive oil. Let it rise for 2 hours. Place it in the fridge for a slow fermentation over night.
Divide the dough in 10 pieces and let it rise for 30 minutes at room temperature. Flatten it each one with a roller pin. Cook it over a hot iron cast, and switch it side until it puffs. ENJOY!!

Custard
2 eggs
350 grams of cream (35%)
150 grams of milk
3 tablespoons of milk powder
80 grams of sugar
300 grams of marzipan
250 grams of orangettes chopped in small pieces
1/2 teaspoon almond essence
Mix the eggs, cream, milk, sugar and milk powder. Place it in a pot at low medium heat until it thickens. Set aside. When it is warm, add the marzipan and mix it well. Once is cold, add the almond essence and the chopped orangettes. Place the mixture in your ice cream maker. Distribute them in ice cream molds. Freeze it for 24 hours.
Chocolate layer
200 grams milk chocolate
20 grams cocoa butter
Melt them both at bain-Marie at low temperature. Cover each ice cream, and place them again in the freezer for 1 hour. ENJOY!

Jardin y Mayonesa con huevos cocidos
Estamos en plena primavera aquí y disfrutamos del clima cálido... nuestro arbol de melocotones está lleno de flores y tengo espinacas que puedo cosechar cuando quiera.
Este año hice un experimento. Leí en internet (no recuerdo dónde) que si pones una bobina de cobre, aumentas la producción de vegetales en tamaño y cantidad. Lo intenté y parece que mis espinacas son más grandes.
Usé la misma tierra que el año pasado, no la fertilicé antes de sembrar las semillas y usé las mismas semillas que el año pasado ya que todavía tengo semillas de ese paquete. Intenté mantener cambios mínimos respecto al año pasado para probar esta adición de cobre, y parece que está funcionando. ¡Nunca comí espinacas tan grandes!
Ahora vamos a la receta. Tuve que hacer blinis salados, pero algunos de mis invitados eran alérgicos a los huevos crudos. Por lo tanto, tuve que hacer una mayonesa especial para que todos disfrutemos de los blinis. Encontré una receta con huevos cocidos que probé. Tengo que admitir que sigo prefiriendo la mayonesa con huevo crudo, pero ésta es un buen sustituto.
Mayonesa con huevos cocidos
4 huevos duros
4 cucharaditas de aceite de oliva
2 cucharaditas de jugo de limón
sal
pimienta
agua según sea necesario
Opcional: mostaza, ajo, hierbas.
En un recipiente coloca los huevos duros cortados en cuartos. Agrega el aceite de oliva, el limón y la sal. Con una batidora de mano de inmersión, mezcle bien, agregue agua según sea necesario para obtener la consistencia deseada. Si lo desea, agregue ajo, mostaza o hierbas. Úselo como mayonesa real. ¡DISFRUTAR!
Garden and Mayonnaise with cooked eggs
We are in full Spring here, and enjoying the warm weather.....our peach tree is full of flowers, and I'm having spinach that I can harvest when I want.
I made an experiment this year. I read in the internet (I don't remember where) that if you put a coil of copper, you increase the production of vegetables in size and quantity. I gave it a try, and it seems that my spinaches are bigger.
I used the same soil as last year, I didn't fertilize it before seedling, and I used the same seeds as last year since I still have seeds from that package. I tried to maintain minimum changes compared to last year to try this copper addition, and it seems that it is working. I never had spinaches these big!
Now, let's go to the recipe. I had to make savory blinis, but some of my guests were allergic to raw eggs. However, I have to make a special mayonnaise for all of us to enjoy the blinis. I found a recipe with cooked eggs that I tried. I have to admit that still I prefer my mayonnaise with raw egg, but this is a good substitute.
Mayonnaise with cooked eggs
4 hard boiled eggs
4 teaspoons of olive oil
2 teaspoons of lemon juice
salt
pepper
water as needed
Optional: mustard, garlic, herbs
In a container, place the hard boiled eggs sliced in quarters. Add the olive oil, lemon, and salt. With an immersion hand blender mix it well, add water as needed to make the consistency you desire. If you wish, then add garlic, mustard or herbs. Use it as real mayonnaise. ENJOY!

Helado de lúcuma cubierto de chocolate
Empecé la temporada de helados... ¡el invierno se acabó!... de todos modos no tenemos invierno en el sur de EE. UU.... unos días fríos en enero y febrero, y ahora tenemos flores floreciendo y el clima perfecto para tomar un helado.
Me encanta la lúcuma. La lúcuma es una fruta que crece en Sudamérica, y cuando se come fresca no es tan buena como en postres o helados. ¡El sabor es como crema de caramelo y el color también!
Helado de lúcuma cubierto de chocolate
Natilla
2 huevos
350 gramos de nata (35%)
200 gramos de leche
3 cucharadas de leche en polvo
400 gramos de pasta de lúcuma (la compré lista para usar). Viene con azúcar, por eso no le agregué azúcar a esta mezcla.
Mezclar los huevos, la nata, la leche y la leche en polvo. Colócalo en una olla a fuego medio bajo hasta que espese. Dejar de lado. Una vez frío, mézclalo con pasta de lúcuma. Coloca la mezcla en tu maquina de hacer helados. Distribuirlas en moldes para helado. Congélalo durante 24 horas.
Capa de chocolate
200 gramos de chocolate de leche
20 gramos de manteca de cacao
Derretir ambos al baño María a baja temperatura. Cubre cada helado y colócalos nuevamente en el congelador durante 1 hora. ¡DISFRUTAR!

I started the ice cream season.....winter is gone!....we don't have winter anyway in the south of USA....few cold days in January and February, and now we have flowers blooming and the perfect weather for ice cream.
I love lucuma. Lucuma is a fruit that grows in South America, and when it is eaten fresh is not as good as in desserts or ice cream. The taste is like cream caramel and the color too!

Custard
