Karpatka





Finally I'm back! with friends and last Summer activities time went fast.

We had a Polish friend for dinner, and I made Karpatka that is a traditional Polish cake. It is both so good and so easy!

Karpatka

Dough

260 grams water

130 grams butter at room temperature, cut into pieces

140 grams plain flour

5 eggs


Cream

Custard

80g sugar

400g milk

40g cornstarch

3 eggs

1 tbsp vanilla paste

120 grams of butter

Cream
2 cups whipping cream
Icing sugar to taste
1 tbsp vanilla paste


Dough

Boil the water, and add the butter. Once they are mixed, turn off the heat, and add the flour. Stir it firmly to avoid any lumps. Let it cool for 1 hour. When it is cold, add the eggs and mix it well. Divide the dough in two pieces. Spread it in a mold of 26 cm diameter over parchment paper. Bake them at 230C for 25 minutes, or until they are golden. Let them cool.


Custard

Mix 300 ml of milk, sugar, and vanilla paste. Place it in a pot, and simmer at low temperature. Mix the eggs, cornstarch, with the remaining 100 ml of milk. Add it to the warm milk. Mix it well, and let it thickens. Set aside, and let it cool. When the custard is cold, add the butter, and mix it with a hand blender. Set aside.

Whipping cream

With a hand blender, whip the whipping cream until it is firm. Add sugar and vanilla paste.


Mix the custard cream with the whipping cream with soft movement. In one half of the baked dough place the custard/cream filling, and place on top the other baked dough. Add some icing sugar on top if needed. Place it in the fridge for 2 hours. ENJOY!
