Zucchini mini tarts in puff pastry....Celebrating Michaelmas


It was time to celebrate Michaelmas again. It is celebrated on September 29 each year, and the meaning of this celebration for Archangel Michael is associated with the shortening of the days. It is believed that Archangel Michael fought against Satan and his evil angels; thus, we celebrate his protection against the darkest months (Autumn and Winter).

The food is very simple. It's kind of a Thanksgiving meal. In fact, it is believed that this celebration was associated with Thanksgiving meals in Ireland after the last harvest.

Zucchini mini tarts in puff pastry

Puff pastry
2 medium zucchini, grated
100 grams of grated Havarti cheese 
60 grams of grated Parmiggiano Regiano cheese
100 grams of crumbled feta cheese
3 eggs 
200 ml whipping cream
2 cloves of garlic
minced oregano 
salt 
pepper 
butter or olive oil to grease the muffin tins

Wash and grate the zucchini. Mix it with the cheeses. Add garlic, oregano, salt and pepper. Add the cream and eggs. Set aside.

Grease a muffin tin, and place a piece of puff pastry in each of them. In each muffin cup, add the zucchini and cheese mixture. Bake in a preheated 365F oven for 30 minutes. ENJOY!!

  2. This is the time of year when everyone has surplus zucchini! I have no doubt that any day now we will be making zucchini bread!
