Dosa and Uttapam


Every country has their own food with probiotics....yogurt, cheese, kimchi, sauerkraut....and in India idli and dosas. This dish is rich in iron and proteins since it is made with lentils and rice.

I have made idli and dosa before, but now I'm posting my own adapted version


Idli and Dosa Batter

3 cups of ponni rice or idli rice
1 cup urad dal lentils
Salt

Filling
4 potatotes
1/2 cup of green peas
onion
salt
turmeric
chilli powder
shrimps optional


Soak them together overnight. Then, grind them to a fine paste (I use the blender), add salt, and leave it to ferment 24 hours. You will end up with a batter with small bubbles and a smell of light vinegar.




Boil the potatoes and make a mash potatoes. Add salt, a pinch of turmeric, and chili powder to your taste. Add cooked green peas. In a pan, stir fry the onions. Set aside.

On a hot pan, sprinkle some oil. Place 3/4 cup of dosa batter. Once it is cooked, turn it over, and apply the potato-green peas-onion filling, add shrimps if you desire. Fold it in half, and serve it.



With the same batter, you can make small round pancakes. As a topping, you can sprinkle purple onions. Flip it over and cook them. These are called Uttapam

  2. No conocia tu blog, y me parece fantástico, he visto recetas muy muy ricas que en casa encantarían, así que me he suscrito para no perderme ninguna de tus recetas!
    Por lo pronto esta me la apunto, voy a buscar todos los ingredientes, a ver si lo consigo, y a prepararla, porque es maravillosa!
