Tarta de Fesas con crema de vainilla
Strawberry with Vanilla Cream Tarte
I made my favorite Spring breakfast....Strawberry with Vanilla Cream Tarte
Pate Sable
250 grams all purpose flour
50 gram almond flour
120 grams icing sugar
120 grams salted butter cold and in small pieces
1 egg
Water (very cold) as needed. Maybe you will need only 1 tablespoon of water.
In a food processor, mix all the ingredients until you have a firm not sticky dough. Place it in the fridge for 1 hour. With a roll pin, stretch it until you have a dough of 3-4mm. Place it in an oven mold for tart. Leave it in the fridge for 30 minutes. Preheat the oven at 175C. Place a parchment paper on top of the tart, and put beans to make it flat when baking it. Bake it for 20-25 minutes or until golden brown. Let it cool.
For the Vanilla Cream
250 ml of warm milk
15g butter
3 egg yolks
50g sugar
20 g cornstarch
1 Teaspoon vanilla extract
In a warm milk, dissolve the butter. Bring to a boil and add the flour, sugar and vanilla essence. Beat it very well. Add the egg yolks. Cook until thick. Let it cool.
Distribute the vanilla cream on top of the baked tart. Arrange sliced strawberries on top of the vanilla cream.
Take 4 or 5 strawberries, chop them, and add 1 tablespoon of sugar. Soak 6 gelatin leaves. In a pan warm the gelatin leaves until they dissolve. Add the chopped strawberries, and cover the strawberries with this strawberry gelatin. Let it cool for 5 hours before serving it. Enjoy!!

Kolompe....Galleta Persa para celebrar Nowruz!
¡Por fin he vuelto!
Gracias por los correos electrónicos y los mejores deseos... Como mencioné, me enfermé mucho y luego mi computadora se enfermó... Ahora, ambos estamos en buena forma... ¡¡y cocinando de nuevo!!
Celebramos Nowruz la semana pasada....una de las festividades que más me gustan!!....Puedo sentir y oler la primavera cada mañana!!....es tan bueno disfrutar del cálido sol y volver a escuchar a los pájaros...
Como de costumbre, preparé Ash Reshteh, una sopa reconfortante con legumbres, espinacas, pasta y hierbas. Como dulces hice Nan-e-berenjeni, Naan-e-gerdool, Baklava, e hice un nuevo dulce Kolompe o Koloocheh que es un pastel relleno de dátiles, nueces y cardamomo..... Fue un placer comerlo !!
Kolompe
para la masa
250 gramos de harina para todo uso
100 gramos de mantequilla
100 gramos de yogur natural
1 huevo
1 cucharada de levadura en polvo
Para el llenado
150 gramos de dátiles
80 gramos de nueces nueces
2 vainas de cardamomo recién molidas
Mezclar todos los ingredientes de la masa hasta tener una masa firme. Rectifica con agua o harina en caso de que lo necesites. Dejar reposar en la nevera durante 1 hora.
Coloca los dátiles, las nueces y el cardamomo en un procesador de alimentos. Mézclalo hasta que hayas molido y mezclado todos los ingredientes.
Estirar con un uslero hasta que tengas 0,3-0,4 mm de grosor. Con un cortador de galletas o un vaso, corta círculos. Coloque una cucharada de la mezcla de dátiles/nueces y cubra con otro círculo de masa. Selle los bordes y haga una decoración si lo desea.
Hornéala a 180C durante 15-20 minutos o hasta que esté dorada. Deja enfriar y DISFRUTA!!

Thanks for the emails and best wishes....As I mentioned, I got very sick, and then, my computer got sick....Now, we're both in good shape....and cooking again!!
We celebrated Nowruz last week....one of the festivities that I liked the most!!....I can feel and smell the Spring every morning!!....it is so good to enjoy the warm sun and to hear the birds again...
As usual, I made Ash Reshteh, a comfort soup with legumes, spinach, pasta and herbs. As sweets, I made Nan-e-berenjeni, Naan-e-gerdool, Baklava, and I made a new sweet Kolompe or Koloocheh that is a paatry filled witrh dates, walnuts and cardamom.....It was a pleasure to eat it!
Kolompe
For the dough
250 grams all purpose flour
100 grams of butter
100 grams of plain yogurt
1 egg
1 tablespoon baking powder
For the filling
150 grams dates
80 grams of walnuts walnuts
2 cardamom pod freshly grinded
Mix all the dough ingredients until you have a firm dough. Adjust with water or flour in case you needed. Let it rest in the fridge for 1 hur.
Place the dates, walnuts and cardamom in a food processor. Mix it until you have grinded and mixed all the ingredients.
Roll it with a roll pin until you have 0.3-0.4 mm of thickness. With a cookie cutter or a glass, cut circles. Place a tablespoon of the date/walnut mix, and cover with another circle of dough. Seal the edges, and make a decoration if you wish to.
Bake it at 180C for 15-20 minutes or until golden brown. Let it cool and ENJOY!!
