Celebrando Nowruz....Vida Nueva ......en Pais Nuevo


Buenos dias...hay alguien en casa? si....han pasado casi cuatro años desde mi ultime publicacion, y muchas cosas han pasado....cuatro viajes extensos y un cambio de pais....ya no vivimos en Canada sino en el sur de Estados Unidos....y nos encanta....

Hace ya casi 1 año que vivimos aca y el cambio fue grande....dejar amigos y  un pais que nos acogio por 16 años donde acumulamos historia, recuerdos, experiencias, y maravillosos momentos fue sin duda un gran paso....y aun cuando extrañamos aquellos momentos y las maravillosas personas que conocimos.....aca estamos felices en una nueva etapa de nuestra vida recreando todo lo que aprendimos en Canada y recordando a nuestros amigos....



Como en otros años, estamos celebrando Nowruz nuevamente. Nowruz es una celebracion Zoroastra que es equivalente al año nuevo....su significado es celebrar el "nuevo dia" ....o en este caso...."nuevos comienzos"....simboliza el triunfo del "bien sobre el mal"....y como sabemos siempre gana el bien sobre el mal....



Por ahora los dejo con estas tres recetas nuevas.....y volvere en Septiembre a todo motor....ya me toca viaje y estare un buen tiempo fuera...




Estare pasando por sus fogones para ver que cosas ricas estan cocinando!!

Este año, he hecho Bastani, Ash Reshteh y Nan-e Berenjeni....tres recetas deliciosas....

Bastani 

1 taza de leche
1 taza y media de crema para batir
2 yemas de huevo
1/2 taza de azucar (en mi caso use 1/3 de taza de azucar pero depende de su paladar)
1/2 taza de pistachios
4 cucharadas de agua de rosas
1/2 cucharadita de azafran
1 cucharadita de vainilla

Poner la leche en un cazo con la vainilla y azafran molido. Llevar a punto de ebullicion y cortar el fuego. Batir las yemas con el azucar hasta que queden blanquecinas. Juntar con la leche tibia y llevar a fuego bajo hasta que espese. Dejar enfriar. Cuando esta frio, batir la crema casi punto chantilly. Mezclar con la crema de azafran, agregar pistachios, agua de rosas y poner en la maquina de hacer helados....Disfrute



Ash Reshteh 

Una sopa vegetariana deliciosa, simple y nutritiva 

Sopa
aceite de oliva (un chorro)
1 cebolla
1/2 taza de lentejas
1/2 taza de frijoles rojos ( o los frijoles que tenga)
1 taza de garbanzos
1/2 cucharadita curcuma
300 gramos de fideos delgados largos (yo tenia anchos)
2 1/2 tazas de espinacas
2 puerros
1 manojo de perejil
1 manojo cilantro
15 hojas menta fresca
1 cucharadita eneldo seco o fresco
6 tazas de agua

Decoracion
1 cebolla
2 cucharadita menta seca
acetite de oliva
1/2 cucharadita curcuma
Kashk (yo use yogurt natural)

Remojar la noche anterior los garbanzos y frijole. Al otro dia cocerlos y reservar. Lavar y picar todas las hojas verdes y el puerro. En una olla, agregar un chorro de aceite de oliva, sofreir la cebolla. Agregar todo lo verde picado, añadir todo lo verde, las 6 tazas de agua y agregar sal. Agregar las lentejas crudas y hervir por 10 minutos. Añadir los fideos cortados, dejar hervir a fuego lento por 15 minutos. Agregar garbanzos y frijoles cocidos. Dejar 20 minutos a fuego bajo hasta que este todo cocido. Corregir de sal

Decoracion
Freir cebolla hasta que este dorada y un poco quemada en los bordes (a gusto). Sofreir menta seca en aceite de oliva y agregar curcuma.

Servir la sopa y decorarla con cebolla frita, mezcla de menta y curcuma y yogurt.....Disfrute




Nan-e Berenjeni

100 gramos de mantequilla
1/2 taza azucar fina
1 yema de huevo
1/2 taza de harina de arroz
1/2 taza de harina
1/4 taza de agua de rosas
semillas de amapola

Batir mantequilla y azucar hasta que quede cremoso, agregar yema de huevo. Agregar harinas y agua de rosas. Si falta (no fue mi caso) agregar un poco de agua. Dejar masa en refrigerador por 30 minutos. Hacer pequeñas bolitas y con el borde de una cuchara hacer decoraciones de arco (indentaciones) pincelar con un poco de agua y decorar con semillas de amapolas. Hornear a 325F por 15-20 minutos hasta que esten doradas (depende de su horno)...Disfrute!



Celebrating Nowruz....New Life....in a new Country!


Good morning ... is there someone at home? yes .... almost four years have passed since my last publication, and many things have happened ... four extensive trips and a change of country ... we no longer live in Canada but in the southern United States .. ..and we love it ....


Almost 1 year ago we lived here and the change was great .... leaving friends and a country that welcomed us for 16 years where we accumulated history, memories, experiences, and wonderful moments was undoubtedly a great step .... and even when we miss those moments and the wonderful people we met ..... here we are happy in a new stage of our life recreating everything we learned in Canada and remembering our friends ....





As in other years, we are celebrating Nowruz again. Nowruz is a Zoroastrian celebration that is equivalent to the new year ... its meaning is to celebrate the "new day" ... or in this case .... "new beginnings" ... symbolizes the triumph of "good" about evil "... and as we know, good always wins over evil ...




For now I leave you with these three new recipes ... and I'll be back in September at full speed .... I have a trip and I'll be away for a while ...

This year, I've done Bastani, Ash Reshteh and Nan-e Berenjeni .... three delicious recipes ....


Bastani


1 cup of milk

1 and a half cup of whipping cream
2 egg yolks
1/2 cup of sugar (in my case use 1/3 cup of sugar but it depends on your palate)
1/2 cup pistachios
4 tablespoons of rose water
1/2 teaspoon saffron
1 teaspoon vanilla

Put the milk in a saucepan with the vanilla and ground saffron. Bring to a boil and cut the fire. Beat the yolks with the sugar until they are whitish. Mix with warm milk and bring to low heat until thick. Let cool. When it is cold, beat the cream almost point chantilly. Mix with the saffron cream, add pistachios, rose water and put in the ice cream machine .... Enjoy








Ash Reshteh

A delicious, simple and nutritious vegetarian soup


Soup

olive oil (a jet)
1 onion
1/2 cup of lentils
1/2 cup red beans (or the beans you have)
1 cup of chickpeas
1/2 teaspoon turmeric
300 grams of long thin noodles (I had wide)
2 1/2 cups of spinach
2 leeks
1 bunch of parsley
1 bunch cilantro
15 fresh mint leaves
1 teaspoon dry or fresh dill
6 cups of water

Decor

1 onion
2 teaspoon dried mint
olive acetite
1/2 teaspoon turmeric
Kashk (I use natural yogurt)

Soak chickpeas and beans the night before. The next day cook and reserve. Wash and chop all green leaves and leeks. In a saucepan, add a stream of olive oil, stir-fry the onion. Add all the chopped green, add all the green, the 6 cups of water and add salt. Add the raw lentils and boil for 10 minutes. Add the cut noodles, simmer for 15 minutes. Add chickpeas and cooked beans. Leave 20 minutes on low heat until completely cooked. Correct salt


Decor

Fry onions until golden brown and a little burned on the edges (at ease). Sofreir dried mint in olive oil and add turmeric.

Serve the soup and decorate with fried onions, mint and turmeric mix and yogurt ..... Enjoy









Nan-e Berenjeni


100 grams of butter

1/2 cup fine sugar
1 egg yolk
1/2 cup of rice flour
1/2 cup flour
1/4 cup of rose water
poppy seeds

Beat butter and sugar until creamy, add egg yolk. Add flours and rose water. If it is missing (it was not my case) add a little water. Leave dough in refrigerator for 30 minutes. Make small balls and with the edge of a spoon make bow decorations (indentations) brush with a little water and decorate with poppy seeds. Bake at 325F for 15-20 minutes until golden brown (depends on your oven) ... Enjoy!
