Zarf Borek de Acelgas

 




Esta no es una receta fácil, pero si estás acostumbrado a hacer croissants o hojaldre, entonces esta masa es muy fácil. Me encanta Zarf Borek y hay muchas variaciones de rellenos. Sin embargo, me encantan las acelgas, y tengo algunas plantadas en mi casa ... en cuanto veo algunas hojas verdes listas para comer, ¡hago algo que me encanta!

Las fotos fueron tomadas de noche ... los colores no son tan buenos, ¡pero el sabor fue increíble!

 Zarf Borek de Acelgas

500 gramos de harina
200 ml de leche fría
 50 ml de agua fría (puede usar aceite para que quede mas crujiente la masa)
1 huevo
1 cucharada de vinagre blanco
1 cucharadita de levadura en polvo
1 cucharada de masa madre (opcional)
1 cucharadita de sal

Mantequilla derretida

Relleno
un manojo de acelgas (puedes usar espinacas)
pimienta
30 gramos de queso feta
30 gramos de havarti
1 huevo
hojuelas de chile
orégano

Lavar y picar las acelgas. Agrega la pimienta, las hojuelas de chile y el orégano. Incorporamos los quesos picados y mezclamos bien. Agrega el huevo y combínalo bien. Dividirlo en 9 porciones.

Mezclar todos los líquidos (leche, agua, huevo, vinagre). Agrega la harina, el polvo de hornear, la masa madre y la sal. Amasarlo muy bien hasta tener una masa blanda y suave. Deje reposar 1 hora a temperatura templada y 1 hora en la nevera.

Dividir la masa en 18 porciones. Enrolle una porción de masa para hacer un círculo plano y úntela con mantequilla derretida. Coloque otra masa plana encima. Tome un lado y colóquelo en el medio, y haga lo mismo con el otro lado.



Doblarlo 1/3 hacia la derecha y nuevamente otro tercio.



Deje reposar tapado durante 30 minutos. Con un uslero, haga un cuadrado plano y lleve las esquinas al centro.


Déle la vuelta y vuelva a enrollarlo con el uslero.


Ponga relleno en el medio
Coloque las esquinas en el medio y también puede agregar un poco de queso en el medio. Cierralo.


Unte con un huevo batido y hornee en un horno precalentado a 375F durante 20-30 minutos hasta que estén dorados. ¡DISFRUTAR!


Swiss Chard Zarf Borek




This is not an easy recipe, but if you are use to make croissants or puff pastry, then this dough is very easy. I love Zarf Borek, and there are many variation of fillings. However, I love swiss chards, and I have some planted at my home....as soon as I see some green leaves ready to eat, I make something I love!

The pictures were taken at night....the colors are not so good, but the taste was awesome!

Swiss Chard Zarf Borek

500 grams of flour
200 ml cold milk
 50 ml cold water
1 egg
1 tablespoon of white vinegar
1 teaspoon baking powder
1 tablespoon of sourdough (optional)
1 teaspoon of salt  

Butter melted

Filling
a bunch of swiss chard (you can use spinach)
pepper
30 grams of feta
30 gram of havarti
1 egg
chili flakes
oregano

Wash and chopped the swiss chard. Add the pepper, chili flakes and oregano. Incorporate the chopped cheeses and mix it well. Add the egg, and combine it well. Divide it in 9 portions.

Mix all the liquids (milk, water, egg, vinegar). Add the flour, baking powder, sourdough and salt. Kneed it very well until you have a soft dough. Let it rest 1 hour at warm temperature and 1 hour in the fridge. 

Divide the dough in 18 portions. Roll a dough portion to make a flat circle, and brush it with melted butter. Place another flat dough on top. Take one side and place it into the middle, and do the same with the other side.



Fold it 1/3 to the right, and again another third.



Let it rest covered for 30 minutes. With a roll pin, make a flat square, and bring the corners to the center.



Turn it over, and roll it with the roller pin again.
Place some filling in the middle
Place the corners into the middle, and you can add some cheese in the middle too. Close it.


Brush it with a beaten egg, and bake it in a preheated oven at 375F for 20-30 minutes until they are golden brown. ENJOY!

Arroz tinta de calamar negro con calamares

 


¡Se acerca el fin de semana! ¡¡Un arroz con tinta de calamar negro está de nuevo en el horizonte !!

Arroz tinta de calamar negro con calamares


Fumet

cascaras de gambas

espinas de pescado y cabeza de pescado si es posible

1 cebolla

Sal y pimienta

750 gramos de agua

Llevar todo a ebullición y dejar unos 10 minutos. Pasarlo por un colador. Hazlo a un lado.


Arroz

1 ñora (chile seco español)

3 dientes de ajo picados

40 gramos de aceite de oliva virgen extra

220 gramos de calamares  limpios y en trozos

70 gramos de tomate frito casero

2 cucharaditas de tinta de calamar

Perejil fresco y picado

250 gramos de arroz español

70 gramos de guisantes congelados

Sal y aceite de oliva

En un mortero, trituramos la ñora. Dejar de lado.

En una paellera añadir el aceite de oliva y sofreír los ajos. Agrega y saltea / cocina los calamares. Incorpora el azafrán y el perejil. Agrega el tomate frito y la tinta de calamar. Cuando esté hirviendo, agrega el arroz y sofríe durante 3 minutos. Agrega el fumet y la sal y cocina por 20 minutos hasta que esté casi hecho. Encienda el horno a 400F, coloque el arroz en el horno durante los últimos 5 minutos y apague el horno. Dejar reposar el arroz en el horno durante 10 minutos. ¡DISFRUTAR!

Weekend is coming! a black squid ink rice is on the horizon again!!


 Black squid ink rice with calamari

Fumet

shells of  prawns

fish bones and fish head if possible

1 onion

Salt and Pepper

750 grams of water

Bring everything to boil and pass it through a sieve. Set it aside. 

Rice

1 ñora (dry Spanish chili)

3 cloves of garlic

40 grams of extra virgin olive oil

220 grams of squid or calamari cleaned and in pieces 

70 grams of home made fried tomato

2 teaspoons squid ink

Parsley fresh and chopped

250 grams Spanish rice

70 grams frozen peas 

Salt and Olive oil

In a mortar, crushed the  ñora. Set aside.

In a paella pan, add the olive oil and sautee the garlic. Add and sautee/cook the squid or calamari. Incorporate the saffron and parsley. Add the fried tomato and squid ink. When it is simmering, add the rice and sautee for 3 minutes. Add the fumet, and salt and cook it for 20 minutes until it is almost done. Turn on the oven at 400F, place the rice in the oven for the last 5 minutes, and turn it off the stove. Leave it the rice in the oven resting for 10 minutes. ENJOY!

Torta cremosa al limone

 

Por ahora, viajo a través de mis sentidos .... especialmente mi paladar ..... recordando los lugares que amo ..... trabajé y viví en Roma .... recuerdo esos días .... .

Este es un pastel Italiano simple con sabor a limón ..... tiene tres capas que lo hacen irresistible con un té o café ..

Torta cremosa al limone

Pasta frolla
90 g de azúcar
90 g de mantequilla fría en trozos
250 g de harina tipo 00
2 huevos
1 pizca de sal

Combine todo junto hasta obtener una masa suave. Con un rodillo, estírelo hasta obtener una masa de 3 mm. Colocarlo en un molde engrasado y cubrir 3-4 cm de los lados. Ponlo en el frigorífico durante 30 minutos.

Crema de limón
Ralladura de 2 limones
150 g de azúcar
250 g de leche entera
2 huevos
2 cucharadas de maicena (más si la quieres más espesa)
60 g de mantequilla en trozos

Mezclar la ralladura de limón, el azúcar, los huevos y la maicena. Caliente la leche. Agregue el milímetro a la mezcla y mezcle bien para evitar grumos. Colócalo en la estufa y cocínalo hasta que espese. Agrega la mantequilla. Combina bien y reserva hasta que esté a temperatura ambiente.

Cubrir la masa

100 g de azúcar
2 huevos
80 g de mantequilla en trozos
100 g de harina tipo 00
30 g de fécula de patata
1 cucharadita de esencia de vainilla
30 ml de leche entera
½ cucharadita de levadura en polvo

Mezcle todos los ingredientes con una batidora de mano. Déjalo a un lado.

Cogemos el molde con la pasta frolla, añadimos la crema de limón y encima la masa de cobertura. Hornee a 350 F durante 45 minutos .... ¡¡DISFRUTE !!


 




Torta cremosa al limone


For now,  I'm traveling through my senses....specially my palate.....remembering the places I love.....I worked and lived in Rome....I remember those days.....

This is a simply lemony Italian cake.....it has three layers that makes it irresistible with a tea or coffee..

Torta cremosa al limone

Pasta frolla

90 g of sugar
90 g of cold butter in chunks
250 g of flour type 00
2 egg 
1 pinch of salt

Combine all together until you have a smooth dough. With a rollin pin, stretch it to a 3 mm dough. Place it in a greased mold and cover a 3-4 cm of the sides. Place it in the fridge for 30 minutes.

Lemon cream
2 lemons zest
150 g of sugar
250 g of whole milk
2 eggs
2 tablespoons of cornstarch (more if you want it thicker)
60 g of butter in pieces

Mix the lemon zest, sugar, eggsand cornstarch. Warm the milk. Add the mil to the mix, and mix it well to avoid lumps. Place it on the stove and cook it until gets thick. Add the butter. Combine it well and set aside until it is at room temperature.

Cover dough

100 g of sugar
2 eggs
80 g of butter in pieces
100 g of flour type 00
30 g of potato starch
1 teaspoon of vanilla essence
30 ml of whole milk
½ teaspoon of  baking powder 

Mix all the ingredients with a hand mixer. Leave it aside.

Take the mold with pasta frolla, add the lemon cream, and on top the cover dough. Bake it at 350 F for 45 minutes....ENJOY!!

Flan Pâtissier

 


Me encanta Francia, pero lo que más me gusta son sus pasteles ..... bueno ..... me encantan todos los pasteles Europeos ..... Mientras tanto, los hago en casa

Me encanta Flan Pâtissier ..... cremoso, fresco y sencillo .....

Flan Pâtissier

Masa
200 gramos de harina
30 gramos de azúcar glas
100 gramos de mantequilla muy fría y en trozos
1 huevo
50 ml de agua

Mezclar la harina y el azúcar glas y combinarlo con la mantequilla hasta obtener una mezcla arenosa. Agrega el huevo y el agua. Combínalo hasta obtener una masa suave y no pegajosa. Déjelo en el frigorífico durante 1 hora.

Con un rodillo, enróllelo hasta que tenga un grosor de 3 mm. Cubre el fondo y los lados del molde. Déjalo en la nevera nuevamente.

Crema Pastelera 

220 ml de leche
120 ml de nata
3 huevos y 2 yemas de huevo
2 cucharaditas de pasta de vainilla
80 gramos de azúcar
30 gramos de maicena


Mezclar la leche, la nata y la vainilla. Colóquelo en una olla y caliéntelo para infundir la leche. Además, puedes infundir la leche con canela, cáscara de naranja o cáscara de limón.

Batir los huevos, las yemas y el azúcar, hasta obtener una mezcla cremosa y amarillenta. Agrega la maicena. Poco a poco, agrega la leche tibia y mézclala bien para evitar grumos. Cocine hasta que espese. Coloque la crema de vainilla caliente en el molde y hornee a 370F durante aproximadamente 30-40 minutos hasta que tenga una superficie que esté parcialmente quemada. ¡DISFRUTAR!

 

Flan Pâtissier

I love Flan Pâtissier.....creamy, fresh and simple.....

Flan Pâtissier

Dough
200 grams flour 30 grams icing sugar 100 grams of butter very cold and in pieces 1 egg 50 ml Water

Mix the flour and icing sugar, and combine it with butter until you have a sandy mixture. Add the egg and water. Combine it until you have a smooth not sticky dough. Leave it ion the fridge for 1 hour.

With a roll pin, roll it until you have a thickness of 3mm. Cover the bottom and sides of the mold. Leave it in the fridge again.

Creme Patisserie

220 ml of milk
120 ml of cream
3 eggs and 2 egg yolks
2 teaspoon of vanilla paste
80 grams of sugar
30 grams of corn starch



Mix the milk, cream and vanilla. Place it in a pot, and warm it up to infuse the milk. Also, you can infuse the milk with cinnamon, orange peel or lemon peel.

Beat the eggs, egg yolks and sugar, until you have a creamy yellowish mix. Add the cornstarch. Slowly, add the warm milk and mix it well to avoid lumps. Cook it until it is thick. Place the hot vanilla cream in the mold, and bake it at 370F for about 30-40 minutes until you have a surface that is partially burned. ENJOY!

Lentejas y Acquacotta

 




Me encantan las lentejas ... en serio ... Me encantan las lentejas tanto que las como todos los días ... el almuerzo para mí siempre son  lentejas ... la cena es cualquier otro plato ...

Esta es una receta que se puede modificar a su gusto; sin embargo, la mezcla de especias hace que estas lentejas sean deliciosas.

Lentejas

1 cebolla picada
4 zanahorias en trozos
1 pimiento morrón rojo en trozos
1 pimiento amarillo en trozos
250 gramos de acelgas
3 dientes de ajo picados
sal pimienta aceite de oliva
1 cucharadita de cúrcuma
1/2 cucharadita de pimentón ahumado
1/2 cucharadita de pimentón picante
1 cucharadita de comino molido
1/2 cucharadita de canela
orégano
3 cucharadas de pasta de tomate casera
1,5 taza de lentejas lavadas y remojadas. Usé una combinación de 1/2 taza de lentejas rojas, 1/2 taza de lentejas verdes y 1/2 taza de lentejas marrones. Por lo general, los remojo durante más de 1 hora.
3-4 tazas de caldo de verduras


En una olla calentar el aceite de oliva y sofreír la cebolla y el ajo. Agrega todas las verduras que quieras agregar excepto las acelgas. Agrega todas las especias y deja hervir a fuego lento durante 7 minutos para liberar los sabores. Agrega las lentejas, el caldo y la salsa de tomate. Déjelo cocinar hasta que las lentejas estén cocidas (¿30-40 minutos?). Añadir las acelgas y dejar cocer durante 5 minutos. ¡DISFRUTAR!

Lentils and ACQUACOTTA....




I love lentils....seriously....I love lentils so much that I eat them everyday......lunch for me is always lentils....dinner is any other dish..

This is a recipe that can be modified as you wish; however, the mix of spices makes this lentils delicious!!

Lentils

1 onion chopped
4 carrots in pieces
1 red bell pepper in pieces
1 yellow bell pepper in pieces
250 grams of swiss chard
3 garlic cloves chopped
salt pepper olive oil
1 teaspoon turmeric
1/2 teaspoon smoked paprika
1/2 teaspoon hot paprika
1 teaspoon grinded cumin
1/2 teaspoon cinnamon
oregano
3 tablespoons of home made tomato paste
1.5 cup of washed and soaked lentils. I used a combination of 1/2 cup of red lentils, 1/2 cup of green lentils and 1/2 cup of brown lentils. Usually, I soak them for more than 1 hour.
3-4 cups of vegetable broth


In a pot, heat olive oil and stir fry the onion and garlic. Add all the veggies you want to add except the swiss chard. Add all the spices, and let it simmer for 7 minutes to release the flavors. Add the lentils, the broth, and the tomato sauce. Let it cook until lentils are cooked (30-40 minutes ?). Add the swiss chard and let it cook for 5 minutes. ENJOY!
