Ciabatta .....Un pan tentador....y unos bollitos de Hilmar!

Me encantan los sandwichs con restos de comida y queso.....un pedazo de tortilla, unos pimentones asados caseros y un buen pan....Cena lista!!



Ciabatta (4 o 6 panes)

450 gramos harina de pan
50 gramos masa madre
1.5 gramos levadura seca
7 gramos de sal
360 gramos de agua tibia
1/2 cucharadita de azucar
Aceite de oliva para pincelar

Mezclar agua con azucar y levadura, dejar espumar. Mezclar harina, masa madre y espuma de levadura. Amasar hasta ligar todos los elementos. Es una masa un poco liquida. Pincelar un recipiente con aceite de oliva, meter la masa y dejar a temperatura ambiente 12 horas. Yo lo hago en la noche y cocino al dia siguiente.

Espolvorear la mesa con bastante harina y estirar la mano con la masa. Dividir en 2 rectangulos. Cada rectangulo doblarlo hasta formar un rectangulo de unos 20 cm. Dividir en 2 o 3 cada rectangulo (en total 4 o 6 chapatas). Dejar en papel de horno con bastante harina y levar 1.5 hora.

Esta masa es bastante liquida




Cocinar en horno precalentado a 225C por 20 minutos (o hasta que esten doradas)  con una bandeja de agua para dar humedad....disfrute



Y ya he repetido esta receta de bollitos de Hilmar....es deliciosa!

I love the sandwichs with leftovers of food and cheese ..... a piece of tortilla, some homemade roasted peppers and a good bread .... Dinner ready !!




Ciabatta (4 or 6 loaves)



450 grams bread flour

50 grams mother mass

1.5 grams dry yeast

7 grams of salt

360 grams of warm water

1/2 teaspoon of sugar

Olive oil for brush



Mix water with sugar and yeast, let froth. Mix flour, sourdough and yeast foam. Knead until you link all the elements. It is a slightly liquid mass. Brush a bowl with olive oil, put the dough and leave at room temperature 12 hours. I do it at night and I cook the next day.



Sprinkle the table with enough flour and stretch your hand with the dough. Divide into 2 rectangles. Each rectangle bend it until forming a rectangle of about 20 cm. Divide in 2 or 3 each rectangle (in total 4 or 6 ciabatta). Leave on baking paper with enough flour and weigh 1.5 hours.

This dough is quite liquid




Cook in preheated oven at 225C for 20 minutes (or until golden brown) with a tray of water to give moisture .... enjoy




And I have already repeated this recipe for Hilmar's rolls ...they are delicious!

Helado de Cassiss en Salsa de Vainilla


En Canada, tenia mi jardin de vegetales. Despues de que la nieve se derretia, empezaba a trabajar la tierra para plantarla......mi huerta me daba de todo........cosechaba tomates, lechugas, papas, acelgas, espinacas,zanahorias, cebolla......incluso alchachofas!!


Pero lo que plantamos como arbustos,era Cassiss.....y cosechabamos para hacer pasteles, tortas, mermeladas y helados.....que sin duda se convirtio en nuestro postre favorito....

Helado de Cassiss en Salsa de Vainilla

Helado de Cassiss

200 gramos de cassiss
1 limon
80 gramos de azucar (mas al gusto)
1taza de crema para batir
Azucar impalpable si necesita

Mezclar el cassiss (previamente lavado) con el jugo de limon y el azucar. Dejar macerar 15 minutos y cocer a fuego medio por 15 minutos. Dejar enfriar. Pasar por licuadora y por un colador fino para sacar semillas.

Batir a ounto de chantilly la crema. Agregar el jarabe de cassiss. Ajustar azucar si es necesario. Colocar en maquina de hacer helado.


Salsa de vainilla
2 yemas de huevo
1.5 taza de leche
1 cucharadita pasta de vainilla
4 cucharadas de azucar
1 cucharada de maicena

Mezclar 1 taza de leche con la vainilla y llevar a ebullicion. Dejar entibiar,
Mezclar las yemas de huevo con 1/2 taza de leche, la maicena y el azucar. Incorporar la leche tibia y llevar a coccion a fuego medio hasta que espese. Dejar enfriar

Servir salsa de vainilla en plato hondo y en medio 1 o 2 cops de helado....disfrute!!




Cassiss Ice Cream in Vanilla Sauce


In Canada, I had my vegetable garden. After the snow melted, I began to work the land to plant it ...... my garden gave me everything ........ I used to harvest tomatoes, lettuce, potatoes, Swiss chard, spinach, carrots, onions. ..... even artichokes!


But what we planted as bushes, was Cassiss ..... and we harvested to make cakes, cakes, jams and ice creams ..... that undoubtedly became our favorite dessert ....

Cassiss Ice Cream in Vanilla Sauce



Cassiss Ice Cream



200 grams of cassiss

1 lemon

80 grams of sugar (more to taste)

1 cup of whipping cream

Sugar impalpable if you need



Mix the cassiss (previously washed) with the lemon juice and the sugar. Let it marinate 15 minutes and cook over medium heat for 15 minutes. Let cool. Pass through blender and through a fine sieve to remove seeds.



Beat the cream with whipped cream. Add the cassiss syrup. Adjust sugar if necessary. Place in ice cream machine.





Vanilla sauce

2 egg yolks

1.5 cup of milk

1 teaspoon vanilla paste

4 tablespoons of sugar

1 tablespoon cornstarch



Mix 1 cup of milk with the vanilla and bring to a boil. Let warm,

Mix egg yolks with 1/2 cup of milk, cornstarch and sugar. Add the warm milk and bring to a boil over medium heat until it thickens. Let cool



Serve vanilla sauce in a deep dish and in the middle 1 or 2 scoops of ice cream .... enjoy !!

Pan Polaco de mi Amiga O.



Cambiarse de casa no es facil.....cambiarse de pais es algo que no se puede explicar....pero este cambio fue facil y positivo....quizas porque lo habiamos deseado por mucho tiempo.....sin embargo, siempre hay cosas que se añoran......comidas, olores, restaurantes......pero por sobre todo los amigos...


Con mi amiga O. cultivamos una gran amistad estos ultimos siete años.....desayunos, paseos, comidas y por supuesto recetas.....este pan es su receta....la primera vez que lo probe me recordo un pan aleman que probe hace muchos años.....es delicioso, nutritivo y con un toque acido.....

Ella me dio originalmente parte de su masa madre.....yo no pude traerme masa madre de otro pais.....pero aca lo pude hacer sin problemas con mi propia masa madre .....y quedo delicioso....




Receta para 3 panes de molde grande (yo hago la mitad y me salen 2 moldes medianos)

1 kg harina de trigo integral
1/2 kg harina de centeno
3 cucharaditas de sal
1/2 taza semillas de linaza
1/2 taza de semillas de girasol
1/2 taza de semillas de calabaza (el interior)
1/2 taza de salvado de trigo
1/2 taza de avena
6-8 tazas de agua tibia
6 cucharadas de masa madre activa


Mezclar todo en un bol y dejar a temperatura ambiente toda la noche (yo lo dejo en el horno)



Al dia siguiente dividir en moldes, y dejar 5 cucharadas de la mezcla en el refrigerador para tener masa madre de este pan. Dejar no mas de 10 dias

Hornear a 400F por 30 minutos, 350F por 1 hora y 300F por 30 minutos. Adaptelo a su horno...

Polish Bread from my friend O.



Changing your home is not easy ... changing your country is something that can not be explained ... but this change was easy and positive ... However, there are always things that you miss ... meals, smells, restaurants ...... but over friends ...

With my friend O. we cultivate a great friendship in the last seven years ..... breakfast, walks, meals and of course recipes ..... this bread is your recipe .... the first time I tried it it reminds me of a German bread that I tried many years ago ..... is delicious, nutritious and with an acid touch .....

She gave me part of her sourdough ..... I could not bring it with myself a sourdough from another country ..... but I could make it without a problem with my own sourdough ..... and it is delicious .. ..




Recipe for 3 large mold panels (I make half and I get 2 medium molds)



1 kg of whole wheat flour

1/2 kg of rye flour

3 teaspoons of salt

1/2 cup flaxseed

1/2 cup of sunflower seeds

1/2 cup pumpkin seeds (inside)

1/2 cup wheat bran

1/2 cup of oatmeal

6-8 cups of warm water

6 tablespoons of active sourdough


Mix everything in a bowl and leave a room temperature overnight (I leave it in the oven)


The next day divide into molds, and leave 5 tablespoons of the mixture in the refrigerator to have this bread's mother dough. No more than 10 days


Bake at 400F for 30 minutes, 350F for 1 hour and 300F for 30 minutes. Adapt it to your oven ...
