Causa Peruana

And we continue at home.....for the benefit of everyone.....Have you thought that somehow through social distance we are helping each other? .....We will be stronger after this time.....

I had some potatoes, avocado, and eggs, and it is getting warmer here; thus, Causa Peruana was the ideal plate to prepare....to spicy up our life!!!

Causa Peruana

1 kg of potatoes cooked
2 avocados
4 hard boiled eggs
Salt, olive oil, mayonnaise
1 garlic, 1/4 of onion chopped, 1/2 lemon
Aji amarillo (Peruvian chili sauce)

One the potatoes are cooked, mashed them. In a pot, add to the chopped onion and chopped garlic, the juice of half lemon and some salt. Let it aside for 10 minutes, and mix it with the mashed potatoes. Season the potatoes with 1 tablespoon of olive oil, 3 tablespoons of mayonnaise, aji amarillo at your taste, and salt. Set aside.

Mash the avocado, and season it at your taste, but without aji amarillo.

Mash the hard boiled eggs, and season it at your taste, but without aji amarillo.

With a food ring, place a portion  of the seasoned mash potatoes, then a portion of hard boiled eggs, then another portion of mashed potatoes, then mashed avocados, then another portion of mashed potatoes. Decorate it with a piece of olive, a piece of hard boiled egg, and mayonnaise.
