Gozleme de Acelgas

  


Me encantan las acelgas... Me encantan simplemente al vapor con unas gotas de aceite de oliva y limón junto con papas hervidas y huevos duros... ¡esa combinación para mí es celestial!

Sin embargo, también tengo que preparar otros platos... En más de 20 años en América del Norte, nunca encontré una tienda o un mercado de agricultores que vendiera buenas acelgas... por lo tanto, siempre las siembro donde quiera que vaya. ..


Las amo en tortillas .....


Y en Gozleme también...Probé este plato en Kuwait, y me encanta!!.....fue amor a primera vista....en Kuwait lo probé con espinacas.....


Gozleme

Masa

450 g de harina todo uso

1 cucharadita de levadura seca instantánea

1 cucharada de masa madre

30 g de aceite de oliva

50 g de yogur natural

180 g de agua tibia o más si es necesario

1/2 cucharadita de sal

Relleno

400 g de acelgas

1/2 cucharadita de orégano seco

3 dientes de ajo

1 huevo

150 g de queso feta desmenuzado

Aceite de oliva


Lavar y picar las acelgas, y saltearlas en aceite de oliva durante unos minutos (medio cocidas). Reserva y mézclalo con el orégano, los dientes de ajo picados, el huevo y el queso feta. Deja reposar para que se combinen los sabores.





Mezclar todos los ingredientes de la masa, y dejar reposar por 1 hora. La masa tiene que ser elástica para poder utilizar el rodillo. Coge 120 gramos de masa y con un rodillo hazla muy fina. Coloque una porción del relleno y dóblelo. Con una pequeña cantidad de aceite, cocine por ambos lados 3-4 minutos por cada lado. ¡¡¡DISFRUTAR!!!







 

Swiss Chard Gozleme


I love love love swiss chards....I love them just steamed with some drops of olive oil and lemon along with a boiled potatoes and hard boiled eggs.....that combination for me is heavenly!!

However, I have to make other dishes too....In 20 plus years in North America, I never found out a store or farmers market that sells good swiss chards....thus, I always plant them myself wherever I go...



I love them in tortillas.....


And in Gozleme too...I tried this dish in Kuwait, and I love it!!.....it was love at first sight....in Kuwait I tried it with spinach.....

Gozleme

Dough

450 g of all purpose flour

1 teaspoon instant dry yeast

1 tablespoon sourdough

30g olive oil

50 g plain yogurt

180 g of warm water or more if required

1/2 teaspoon salt

Stuffing

400 g swiss chard

1/2 teaspoon dried oregano

3 garlic cloves

1 egg

150g crumbled feta cheese

Olive oil

Wash and chop the swiss chard, and sautee them in olive oil for few minutes (half cooked). Set aside, and mix it with the oregano, chopped garlic cloves, egg, and feta cheese. Let it rest for the flavors to combine.







Mix all the ingredients of the dough, and let it rest for 1 hour. The dough has to be elastic in order to use the rolling pin. Take 120 grams of dough and with a rolling pin make it very thin. Place a portion of the filling, and fold it. With a small quantity of oil, cook it for both sides 3-4 minutes each side. ENJOY!!!

Setas Portobello con Queso y Pate de Gambas

  


Son recetas muy fáciles y deliciosas... iniciamos nuestra temporada de parrilladas en marzo; así, durante los fines de semana, podemos disfrutar de platos rápidos y fáciles con una rica ensalada.

Portobello con queso

6 hongos portobello

3 dientes de ajo

puede elegir una hierba, ya sea orégano fresco, perejil, cilantro o una combinación de hierbas

sal

aceite de oliva

queso

Lava los champiñones portobello y sécalos con una toalla de papel.

En un mortero machacar los ajos con el aceite de oliva, la sal y las hierbas.

Calentar la parrilla, y colocar los champiñones por 3 minutos abajo para que se cocinen. Dales la vuelta y cocínalos durante otros 3 minutos. Distribuya el ajo y las hierbas, y déjelo cocinar por 1 minuto. Coloca el queso encima, apaga la parrilla y déjalos estar por 2 minutos. ¡¡DISFRUTAR!!







Paté de gambas

Puedes hacer esto con sobras de pollo, champiñones o lo que tengas a mano.

150 gramos de camarones

200 gramos de queso crema

3 dientes de ajo

60 gramos de queso parmiggiano reggiano rallado

cilantro, perejil u orégano

Saltea los camarones con aceite de oliva y sal. En una licuadora, licúalo (con todos los jugos del salteado) con los quesos, las hierbas y el ajo. Corregir de sal. Déjalo en la nevera durante al menos 6 horas o hasta que esté firme. ¡¡DISFRUTAR CON BASTANTE PAN!!

Portobello with cheese and garlic and shrimp pate

 


These are very easy and delicious recipes...we started our barbeque season in March; thus, during the weekends, we can enjoy fast and easy dishes with a nice salad.

Portobello with cheese

6 Portobello mushrooms

3 garlic cloves

you can choose a herb either fresh oregano, parsley, cilantro or a combination of herbs

salt 

olive oil

cheese

Wash the portobello mushrooms and dry them with a paper towel.

In a mortar, crush the garlics with olive oil, salt and the herbs.

Heat the barbeque,  and place the mushrooms for 3 minutes down to cook them. Turn them over, and cook them for another 3 minutes. Distribute the garlic and herbs, and let it cook for 1 minute. Place the cheese on top, turn off the barbeque, and let them be for 2 minutes. ENJOY!!







Shrimp pate

You can make this with leftovers of chicken, mushrooms, or what do you have handy

120 grams of shrimp

200 grams o cream cheese

3 garlic cloves

60 grams of parmiggiano reggiano cheese grated

cilantro, parsley or oregano

Sautee the shrimps with olive oil and salt. In a blender, blend it (with all the juices from the sautee) with the cheeses, the herbs and the garlic. Correct it for salt. Leave it in the fridge for at least 6 hours or until is firm. ENJOY!!

Idlis

  


Esta es una foto antigua de idlis con sambar... ¡invitamos a amigos y comimos de todo!... No pude tomar fotos nuevas;)

Sé que tenía esta receta de antes, pero la volví a hacer con mi sambar masala en polvo. Siempre lo cambio para usar las verduras que tengo en la heladera....resulta delicioso!!....lleno y reconfortante!

Este es el primer plato hindú que aprendí a cocinar... ¡y me encanta!

La masa para idli y dosa es la misma. Uso un poco más de agua en la dosa para que el panqueque quede más suave.

masa

3 tazas de arroz ponni

1 taza de urad dal

Sal

Remoje el arroz y el urad dal juntos durante la noche. Luego, muélelos hasta obtener una pasta fina (yo uso la licuadora), agregue sal y déjelo fermentar 24 horas.

Veréis que está fermentado cuando la masa tenga burbujas.


Coloque la masa en moldes idli engrasados (cepíllelos con aceite) y cocínelos al vapor sobre agua hirviendo. Los agujeros de los moldes de idli harán que el vapor pase y cocine los idlis.


Tienes que colocar la bandeja idli en una olla con agua hirviendo (solo 3 cmc de agua hirviendo). Cocínelo hasta que esté firme, que suele ser de 8 a 10 minutos.


Sabrás que los idlis están cocidos cuando suban y no estén blandos.

Cuando estén tibios, sácalos de los moldes idli......y sírvelos con sambar

2 tazas de toor dal

3.5 tazas de agua

1 1/2 cucharadita de pasta de tamarindo (más 1 taza de agua)

1 cucharadita de cúrcuma

Sal

Masala Sambar (puedes usar la marca MTR o MDH)

7 hojas de curry

Semillas de mostaza

Chiles si lo deseas

Verduras como cebolla, zanahoria, patata y tomate.

Petróleo


Remoja el tamarindo en 1 taza de agua durante 25 minutos. Exprímelo para hacer 1 taza de jugo de tamarindo. reservalo

Lave el toor dal y cocínelo en 3. tazas de agua con cúrcuma y sal. Desechar la espuma que se obtiene al cocinarlo. Cocine hasta que esté suave. Agregue el jugo de tamarindo y la asafétida. Agregue las verduras en cubos y las hojas de curry. Cocine a fuego lento hasta que esté cocido.

2 cucharadas de aceite

1/2 cucharadita de semillas de mostaza

3 dientes de ajo machacados

2 cucharadas de sambar masala en polvo

2 chiles rojos secos cortados por la mitad


Calentamos el aceite y añadimos las semillas de mostaza, cuando estén saltando bajamos el fuego. Agregue el polvo de sambar masala y los chiles rojos. Mézclalo bien y agrégalo a la mezcla de sambar. Sírvelo tibio con los idlis. ¡¡DISFRUTAR!!

Idlis

 


This is an old picture of idlis with sambar....we invited friends, and we ate everything!...I couldn't take new pictures;)

I know that I had this recipe from before, but I made it again with my sambar masala powder. I always change it to use the vegetables that I have in the fridge....it turn out to be delicious!!....fulfilling and comforting!

This is the first Indian dish that I learned to cook....and I love it!

The batter for idli and dosa is the same. I use a little more water in the dosa to make the pancake smoother.

Batter

3 cups of ponni rice
1 cup urad dal
Salt

Soak the rice and urad dal together overnight. Then, grind them to a fine paste (I use the blender), add salt, and leave it to ferment 24 hours.

You will see that is fermented when the batter has bubbles.



Place the batter into greased idli molds (brush them with oil), and steam it over boiling water. The holes of the idli molds will make the steam to go through and cook the idlis.



You have to place the idli tray in a pot with boiling water (only 3 cmc of boiling water). Cook it until firm, which is usually 8-10 minutes.

You will know that the idlis are cooked when they rise and are not soft.

When they are warm, take them out of the idli molds......and serve them with sambar

Sambar

2 cup of toor dal
3.5 cups of water
1 1/2 teaspoon tamarind paste (plus 1 cup of water)
1 teaspoon Turmeric 
Salt
Sambar Powder (you can use the brand MTR or MDH)
7 curry leaves
Mustard seeds
Chillies if you wish
Vegetables such as onion, carrot, potato,and tomato. 
Oil

Soak the tamarind in 1 cup of water for 25 minutes. Squeeze it out to make 1 cup of tamarind juice. Reserve it.
Wash the toor dal, and cook it in 3. cups of water with turmeric and salt.  Discard the foam that is obtained when you cook it. Cook it until is soft. Add the tamarind juice, and the asafoetida. Add the vegetables in cubes, and the curry leaves. Simmer it until it is cooked.

Tempering
2 tablespoons of oil
1/2 teaspoon of mustard seeds
3 garlic cloves crushed
2 tablespoons of sambar masala powder
2 red dry chillies cut in half

Heat the oil and add the mustard seeds, when they are popping lower the heat. Add the sambar masala powder and the red chillies. Mix it well, and add it to the sambar mix. Serve it warm with the idlis. ENJOY!!

Masala para Sambar

 



Todo el mundo sabe que me encanta la comida India... especialmente Idlis, Dosa y Sambar... ¡comida del sur de la India!
Fue difícil para mí encontrar la mezcla de especias para sambar masala... Así que le pedí a mi amiga una receta de masala para sambar, y tenía todos los ingredientes en mi despensa... así que lo hice en casa.

  Ingredientes

30 gramos de chile rojo seco
20 gramos de chile cachemir
30 gramos de semillas de cilantro
30 gramos de semillas de fenogreco
75 gramos Chana Dal 
45 gramos Urad Dal 
45 gramos Arroz
25 gramos de asafétida
10 hojas de curry
1 cucharadita de polvo de cúrcuma

En una sartén de hierro fundido, tostar durante 3 minutos cada uno de los ingredientes de la lista anterior por separado (excepto la asafétida). tostar la cúrcuma y las hojas de curry durante 1 minuto solamente. Una vez que todo se haya enfriado, muela todo en un molinillo. Manténgalo en un lugar oscuro y utilícelo en su receta. Publicaré mi sambar e idlis en la próxima publicación. ¡¡DISFRUTAR!!

Sambar Masala Powder





Everybody knows that I love Indian food....specially Idlis, Dosa, and Sambar.....South Indian food!

It was difficult for me to find the spices mix for sambar masala....Thus, I asked my friend for a sambar recipe, and I had all the ingredients in my pantry....so, I made it at home 

 Ingredients

30 grams Dry Red Chilli  

20 grams Kashmiri Chilli 

30 grams Coriander Seeds 

30 grams Fenugreek Seeds 

75 grams Chana Dal 4 tbsp 

45 grams Urad Dal 2.5 tbsp 

45 grams Rice 

25 grams Asafoetida

10 Curry Leaves 

1 teaspoon Turmeric Powder 

In a cast iron pan, roast for 3 minutes each of the ingredients separately in the list above (except the asafoetida). Roast the turmeric and curry leaves 1 minute only. Once everything is cool down, grind everything in a grinder. Keep it in a dark place, and use it accordingly. I will post my sambar and idlis in the next post. ENJOY!!

Pan de Masa Madre

 






No compro pan, solo hago pan casero con mi masa madre. En Canadá, tenía una masa madre que me compartió una amiga... ¡tenía 35 años!... ¡el pan con esa masa madre estaba delicioso!....Desde que me mudé a los EE. UU., tuve que comenzar mi masa madre desde cero .... después de 4 años, estoy empezando a tener el pan que me encanta .....

Pan de masa madre

400 gramos de harina de pan orgánica. Yo uso Harina de Pan Artesanal de Molienda Central

20 gramos de harina de centeno orgánica

80 gramos de harina de trigo integral orgánica germinada

350 gramos de agua

12 gramos de sal

100 gramos de masa madre 100% hidratación

Mezcla agua y harinas. Ponga a un lado durante 1 hora. Inorporar la masa madre y la sal. Deja que suba a temperatura ambiente durante 5-6 horas, volteando la masa por los cuatro lados cada 1 hora. Dejamos fermentar a temperatura fría en la nevera durante 12 horas. Sacamos de la nevera y hacemos una bola. Sobre una superficie limpia y espolvoreada con harina, forma una bola y colócala sobre un molde o batard espolvoreado. Dejar reposar durante 15 minutos. Dejamos fermentar a temperatura fría en la nevera durante otras 12 horas. Precaliente el horno a 450 F. Coloque un horno holandés (olla de hierro fundido) para que se precaliente durante 30 minutos. Coloque el pan en un trozo de papel pergamino y dentro de una olla de hierro fundido. Espolvorea con harina, y haz unos cortes.. Deja hornear por 35 minutos, y 10 minutos sin tapa. Si desea verificar que el pan esté completamente cocido, puede usar un termómetro. La temperatura tiene que estar por encima de los 205F... ¡DISFRUTA!

Sourdough bread






 I don't buy bread, I only make home bread with my sourdough. In Canada, I had a sourdough that a friend shared with me....it had 35 years old!...the bread with that sourdough was delicious!....Since I moved to the USA, I had to start my sourdough from scratch ....after 4 years, I'm starting to have the bread that I love..... 

Sourdough bread

400 grams organic bread flour. I use Central Milling Artisan Bread Flour

20 grams of organic rye flour

80 grams of organic whole wheat flour sprouted

350 grams of water

12 grams of salt

100 grams of sourdough 100 % hydration

Mix water and flours. Set aside for 1 hour. Mix in the sourdough and salt. Let it rise at room temperature for 5-6 hours, turning the dough in the four sides every 1 hour. Let it ferment at cold temperature in the fridge for 12 hours. Take it out of the fridge, and make a ball. On a clean surface with dusted flour, shape ball, and place it on a dusted mould or batard. Let it rest for 15 minutes. Let it ferment at cold temperature in the fridge for another 12 hours. Preheat the oven at 450 F. Place a Dutch oven (iron cast pot) to be preheated for 30 minutes. Place the bread on a piece of parchment paper, and inside an iron cast pot. Dust it with flour, and make some cuts.. Let it bake for 35 minutes, and 10 minutes without a lid. If you want to check the bread is fully cooked, then you can use a thermometer. The temperature has to be over 205F...ENJOY!!

Dips para dias de primavera

 



Yo los llamo hummus, pero en realidad no lo son ya que no tienen tahini. El tahini es lo único que no me gusta porque me resulta demasiado grasoso. Por lo tanto, aquí está mi versión de un "hummus" más ligero.


Hummus

2 tazas de garbanzos secos

3 cucharaditas (por lo menos) de comino

Aceite de oliva

4 dientes de ajo o más

Yogur, leche o mayonesa

Sal

Limón

1 remolacha cocida o al horno. Prefiero al horno porque es menos aguado. Cuando hago pan, coloco una remolacha lavada en el horno envuelta en papel de aluminio. Yo uso el calor del horno para hornearlo.

Remoje los garbanzos durante la noche con una cucharadita de comino. Al día siguiente, cuécelo en una olla a presión durante 20 minutos. Deja enfriar. En una licuadora, licúalo con aceite de oliva, yogur, leche y mayonesa (las proporciones las decides tú), 2 cucharaditas o más de ajo recién molido y 2 cucharadas de comino recién molido. Corregir de sal, y añadir unas gotas de limón. Dividirlo en dos. A la mitad, licúalo con la remolacha al horno. Corregir de sal y especias. ¡DISFRUTAR!

Hago mi propio yogur. Lo escurrí, y terminé con una especie de queso crema. Uso el suero para hacer pan, y uso el yogur colado para hacer dip de pimiento. Hago mi propio pimiento en aceite de oliva y hierbas y lo usé para esta salsa.

Dip de pimiento morrón

1 taza de yogur casero colado

3/4 taza de pimiento

Yo uso ajo y aceite de oliva del pimiento. Tienes que agregarlos.

En una licuadora agregue el yogur de pimiento morrón, 2 dientes de ajo, sal y un poco de aceite de oliva. Licuar y servir.


¿Cómo los como? con mi pan casero de masa madre. Esa receta para el próximo post...











 

Dips for Spring Days!



I call them hummus, but in reality they are not since they don't have tahini. Tahini is the only thing that I don't like because it is too greasy to me. Thus, here is my version of a lighter "hummus" .


Hummus

2 cups of dry chickpeas

3 teaspoon at least of cumin

Olive oil

4 garlic cloves or more 

Yogurt, milk or mayonnaise

Salt

Lemon

1 beet cooked or baked. I prefer baked because is less watery. When I make bread, I place a washed beet in the oven wrap in aluminum foil. I use the heat of the oven to bake it.

Soak the chickpeas overnight with a teaspoon of cumin. The next day, cook it in a pressure cooker for 20 minutes. Let it cool. In a blender, blend it with olive oil, yogurt, milk and mayonnaise (proportions are up to you), 2 teaspoons or more of freshly crushed garlic, and 2 tablespoons of freshly grinded cumin. Correct for salt, and add some drops of lemon. Divide it in two. To one half, blend it with the baked beet. Correct it for salt and spices. ENJOY!

I make my own yogurt. I strained it, and I ended up with a kind of cream cheese. I use the whey for making bread, and I use the strained yogurt to make bell pepper dip. I make my own bell pepper in olive oil and herbs and I used it for this dip.

Bell pepper dip

1 cup of strained home made yogurt

3/4 cup of bell pepper

I use garlic and olive oil from the bell pepper. You have to add them.

In a blender add the yogurt bell pepper, 2 garlic cloves, salt, and some olive oil. Blend it and serve.




How do I eat them? with my homemade sourdough bread. That recipe for the next post...
