Dulces de Diwali.......Finalmente!!

El tiempo nos tiene agotados ..... la nieve ha llegado y ha cambiado nuestra rutina ....

Tuvimos la suerte de que la nieve llegó tarde, pero ahora vamos a vivir esta 
maravillosa pesadilla que es la nieve. Me encanta la nieve, pero la vida cambia con su llegada.

Tenemos que ir temprano a todas partes con el fin de evitar un accidente de coche...... los caminos son muy peligrosos ahora, y tenemos que limpiar la nieve en la parte delantera de nuestro jardín, con el fin de evitar multas .....

Sin embargo, hay un lado bueno ..... con todo el ejercicio que hacemos para limpiar la nieve ..... necesito calorías !!!...... y aquí tenéis algunos de los dulces Indios de Diwali.....

¿Se acuerda de mi Rasmalai?


He hecho la misma receta, pero incorpore azafran molido (1/4 de cucharadita) para hacer los ovalos. Resultaron deliciosos!....Les puse coco rallado encima....



Gulab Jamun......rico en textura, dulce y suave al mismo tiempo...... sin duda uno de mis favoritos.....hice esta receta de  Chef In You y es perfecta!

Gulab Jamun



1 1/2 taza de Khova (es una especie de requesón que se puede hacer al hervir la leche a fuego lento)
1 taza de harina para todo uso
3 tazas de azúcar -
1 taza de agua
3 pizcas de bicarbonato de sodio para cocinar
4 vainas de cardamomo (machacado)
Azafrán 
Gotas de Agua de Rosas
Aceite
Ghee

Mezcle el azúcar y el agua en una cacerola amplia, y poner a fuego lento hasta que el azúcar se disuelva. 
Incorporar el cardamomo (machacado), azafrán y agua de rosas. Mantener este almíbar tibio.

Mezclar la Khova, la harina y el bicarbonato de cocina. Amasar. Si usted ve que la masa se seca, a continuación, agregar agua tibia (una cucharadita a la vez).Tiene que tener una masa suave.

Con sus manos grasientas (yo usé ghee), hacer bolas pequeñas. Tienen que ser pequeños, ya que se expanden cuando se fríe y cuando están en remojo en almíbar. 
Las bolas tienen que ser lisas, sin grietas en el exterior. Por lo tanto, no se abrirá cuando esten en almíbar.

En una sartén honda, mezcle Ghee  y aceite para freír (50-50). 
Freír las jamuns (3 a 4 al mismo tiempo .... no más porque va a enfriar el aceite) en un fuego medio hasta que estén dorados. 
El aceite no debe tirar humo.

En primer lugar, el jamuns baja, después flotan en la parte superior (como ñoquis). Por lo general, giran en su aceite,. Por lo tanto, se doran uniformemente. Una vez que estén dorados por todos lados, retirar del aceite y colóquelas sobre una toalla de papel para drenar el aceite. Inmediatamente, los pone en el jarabe caliente a remojar. Esto hará que el jamun este suave, liso, y mantenga la forma.

Remoje el jamuns fritos en el jarabe durante 1-2 horas. Dependiendo del número de jamuns, puede aumentar la cantidad de jarabe.

Guardar en recipiente cerrado (envoltura de plástico o contenedor). Por lo general, se sirve tibio, pero frío son buenos también. DISFRUTE!





El tercer dulce que hice fue burfi de coco.....me encanta!....puse la receta anteriormente aqui....tambien se que algunos de Ustedes lo han hecho .....es delicioso!

Este año probamos dulces de mazapán de anacardos.... son deliciosos! ... Voy a aprender a hacerlos para publicarlos....

Hemos comprado un regalo más para el sorteo .... es algo que usamos para la Navidad ....

It has been exhausting this time.....the snow has arrived and has changed our routines....

We were lucky that snow arrived late, but now we will live through this wonderful nightmare that is snow. I love snow, but life changes with it.

We have to go early everywhere in order to avoid a car crash...... the roads are really dangerous now, and we have to clean the snow in the front of our garden in order to avoid fines.....

However, there is a good side.....with all the exercise I do to clean the snow.....I need calories!!!......and here you have some of the Indian sweets from Diwali.....

Do you remember my Rasmalai?

I have made the same recipe, but I add crushed saffron (1/4 teaspoon) and made the ovals. It turn out delicious!....I sprinkle on it with shredded coconut....



Gulab Jamun......rich, sweet, one of my favourites Indian sweets.....I made this recipe from Chef In You and it was perfect!

1-1/2 cups Khova (it is a kind of ricotta that you can make by simmering milk at low heat) 
1 cup all purpose flour
3 cups of sugar – 
1 cup of water
3 pinches of cooking baking soda 
4 pods of cardamom 
Saffron a few
Rose water essence few drops
Oil 
Ghee


Mix sugar and water in a broad pan, and heat it at low heat until sugar dissolves. Incorporate cardamom (crushed), saffron, and rose water. Maintain this syrup warm.

Mix the Khova, flour, and the cooking soda. Knead them. If you see that the dough is dry, then add warm water (a teaspoon at a time). You have to have a smooth dough.

With your greasy hands (I used ghee), make small balls. They have to be small because they expand when you fry them and when you soak them in syrup. The balls have to be smooth, without cracks in the outside. Thus, they will not open when you soak them in syrup.

In a deep pan, heat Ghee and oil to deep fry (50-50). Fry the jamuns (3 to 4 at the same time....no more because it will cool the oil) in a medium heat until they are golden brown. The oil should not smoke.

First, the jamuns go down, then they float to the top (like gnocchis).Usually, they rotate in their oil; thus, they brown uniformly. Once they are brown in all sides, remove from the oil, and place them over paper towel to drain the oil. Immediately, put them in a warm syrup to soak them. This will make the jamuns soft, smooth, and will maintain the shape.

Soak the fried jamuns in the syrup for 1-2 hours. Depending on the number of jamuns you will end up, you can increase the amount of syrup.

Store them closed (plastic wrap or container). Usually, they are served warm, but cold they are good also.

We have bought one more gift for the draw....it is something that we use here for Christmas....I will  post the picture later on!

De atrasos y sorteo para mis seguidores.....Why I have been late and a draw for my followers..........


Disculpen si no he visitado sus cocinillas ni he puesto recetas......pero esta semana el tiempo me ha pillado y me ha dejado sin respiracion......

La vida ha corrido sin dejarme tiempo.....cambio de casa, Accion de Gracias, Diwali, Halloween.....y ahora Navidad!!!!!..... espero volver a la normalidad esta semana.....

Tambien le pido disculpas a mis nuevos seguidores.....nunca me habia pasado que no habia podido devolverles la visita.....les prometo esta semana me pondre al dia.....

Apologies if I have not visited your blogs and recipes ...... but I have had no time this week .....Life has caught me and left me without breath ......

Life is running and I’ve been without  time ..... moving house, Thanksgiving Day, Diwali, Halloween and now Christmas..... !!!!!..... I hope to return to normal this week .....

Also I apologize to my new followers ..... never happened to me that I had not been able to return the visit ..... I promise I'll catch up .....
