Higos.... Tarta de higos con almendras y otras recetas con higos

 





Esta es la época del año que me encanta... ¡los higos están en temporada y me encantan los higos!

No solo me encanta comerlos frescos, sino que también guardo algunos para hacer algunos de los platos que me encantan.






Este año hice una tarta que no había hecho en años, estaba deliciosa... nos la comimos inmediatamente, y se me olvidó tomar una foto del interior... ¡estaba cremosa y suave!

Tarta De Higos y Almendras

Masa
250 gramos de harina
125 gramos de mantequilla fría (en cubos pequeños)
40 gramos de azúcar en polvo
Pizca de sal

Relleno

7-8 higos
1/2 taza de almendras rebanadas
220 gramos de queso mascarpone
220 gramos de crema fresca
4 huevos
1/2 taza de azúcar (puedes usar más o menos)
Unas gotas de esencia de almendras
Unas gotas de esencia de vainilla

En un procesador de alimentos, mezcle la harina, la mantequilla, el azúcar y la sal. Agregue agua (en pequeñas cantidades), hasta que tenga una masa suave que no se pegue en las manos. Haz una bola y déjala reposar en el refrigerador por 30 minutos. Use un rodillo y enróllelo al grosor deseado (en mi caso fue de aproximadamente 0,5 cm). Póngalo en un molde apto para horno y cúbralo con frijoles. Precaliente el horno a 380F y cocine por 10 minutos, o hasta que esté a la mitad de la cocción. Sáquelo del horno y deseche los frijoles (puede reutilizarlos más tarde para otro pastel).

Lava los higos y córtalos en rodajas. Dejar de lado. Batir los huevos con el azúcar hasta que estén dobles y cremosos. Agregue el queso mascarpone y la crema fresca. Mézclalo bien.

Sobre la tarta (que está a medio cocer), esparcir las almendras laminadas. Encima, ponga la mezcla de crema fresca, queso y huevos. Distribuir los higos y espolvorear con azúcar encima de cada uno. Póngalo en un horno precalentado a 365F durante 30 minutos, o hasta que esté cocido. ¡DISFRUTAR!

This is the time of the year that I love.....figs are in season and I love figs!

Not only I love to eat them fresh, but also I keep some for making some of the dishes that I love. 






This year I made a cake that I haven't done in years, it was delicious.....we ate it immediately, and I forgot to take a picture of the interior....it was creamy and soft!

Almond Fig Tart

Dough
250 grams of flour
125 grams of cold butter (in small cubes)
40 grams of sugar powder

Pinch of salt

Filling

7-8 figs
1/2 cup of sliced almonds
220 grams of Mascarpone cheese 
220 grams of creme fraiche
4 eggs
1/2 cup of sugar (you can use more or less)
Few drops of almond essence
Few drops of vanilla essence

In a food processor, mix the flour, butter, sugar, and salt. Add water (in small amounts), until you have a soft dough that don't sticks into your hands. Make a ball, and let it rest in the refrigerator for 30 minutes. Use a roll pin, and roll it to the desire thickness (in my case it was about 0.5 cm). Put it into an oven safe mold, and cover it with beans. Preheat the oven at 380F, and cook it for 10 minutes, or until it is half way cooked. Take it out from the oven, and discard the beans (you can reuse them later for another pie).

Wash the figs, and cut them in slices. Set aside. Beat the eggs with the sugar until they are double and creamy. Add the mascarpone cheese, and the creme fraiche. Mix it well.

Over the pie (that is half way cooked), spread the sliced almonds. On top, put the mix of creme fraiche, cheese, and eggs. Distribute the figs and sprinkle with sugar on top of each one. Put it into a preheated oven at 365F for 30 minutes, or until is cooked. ENJOY!

Panes (fougasse, grissini,panes con hierbas) y Mantequilla con hierbas

 


A veces en la vida... ¡solo queremos comer pan con mantequilla!

Tenía algo de queso y fruta, y solo necesitaba un buen pan y mantequilla para comerlos....

Grissini

520 g de harina
260 g de agua tibia
60 g de aceite de oliva
1 cucharada de azúcar o 1 cucharada de miel
1 1/2 cucharaditas de levadura seca
2 cucharadas de masa madre
1 cucharadita de sal
sal para espolvorear

Mezclar el agua, el azúcar y la levadura seca. Deja que haga espuma. Agregue la masa madre, el aceite de oliva, la harina y la sal. Amasar por 6 minutos, y dejar reposar por 1 hora.

Con un rodillo, aplanarlo hasta que tenga un grosor de 0,3 mm. Córtalo en tiras y con la mano gira los extremos de cada tira en direcciones opuestas. Deja que suba durante 1 hora y hornéalo a 220 °C durante 15 minutos o hasta que esté dorado. ¡DISFRUTAR!



Fougasse

350 gr de harina de pan
100 gr de puré de patatas sin agua
5 gr de sal fina de mesa
5 g de azúcar
1 1/2 cucharadita de levadura instantánea
180 gr de agua fría
2 cucharadas de levadura madre

Mezclar todos los ingredientes húmedos con la levadura. Dejar reposar durante 5 minutos. Agregue los ingredientes secos y mezcle bien. Colócala en un bol engrasado, tapa con film plástico y déjala fermentar durante 1 hora aproximadamente (24ºC) o hasta que doble su volumen. Una vez fermentado, lo colocamos en una bandeja con papel de horno y con las yemas de los dedos engrasadas hacemos unas muescas y rociamos con aceite de oliva y sal. Deja que suba durante 45 minutos. Hornéalo a 220C durante 15 minutos o hasta que esté dorado. ¡DISFRUTAR!



Pan con hierbas

Hago mi  pan blanco de rebanada de Hilmar. Aqui tienes la receta

Como tengo un juego de mini moldes, dividí mi masa en bolitas de 150 gramos cada una.


Hice 2 simples sin sabor, 2 con hojuelas de chile, 1 con orégano y 1 con romero. Agregue solo un toque para no dominar los sabores.




Hornéalo a 220C durante 25 minutos o hasta que esté dorado. ¡DISFRUTAR!

Los horneo todos al mismo tiempo para hacer un uso eficiente del horno.


¿Y la mantequilla? Siempre tengo hierbas frescas en mi jardín. Yo mezclo mantequilla con cebollín, otra con romero, y la otra con orégano y ajo.....¡DISFRUTA!

Breads (fougasse, grissini, bread with herbs) and Butter with herbs


Sometimes in life....we just want to eat bread and butter!

I had some cheese and fruit, and I just needed a good bread and butter to eat them....

Grissini

520 g of flour
260 g of water warm
60 g of olive oil
1 tablespoon of sugar or 1 tablespoon of honey
1 1/2 teaspoons of dry yeast
2 tablespoons of sourdough
1 teaspoon of salt
salt to sprinkle

Mix the water, sugar, and dry yeast. Let it make foam. Add the sourdough, olive oil, flour, and salt. Kneed it for 6 minutes, and let it rest for 1 hour.

With a roll pin, flatten it until you have 0.3 mm thickness. Cut it in stripes, and with your hand twist the ends of each strip in opposite directions. Let it rise for 1 hour, and bake it at 220C for 15 minutes or until golden brown. ENJOY!



Fougasse

350 gr of bread flour
100 gr of mashed potatoes without water
5 gr of fine table salt
5 g of sugar
1 1/2 teaspoon instant yeast
180 gr of cold water
2 tablespoons of sourdough starter 

Mix all the wet ingredients with the yeast. Let it rest for 5 minutes. Add the dry ingredients, and mix it well. Place it in a greased bowl, and cover with plastic film and leave it to ferment for approximately 1 hour (24ºC) or until it doubles its volume. Once fermented, place it on a tray with baking paper and with the fingertips oiled make indents and sprinkle olive oil and salt. Let it rise for 45 minutes. Bake it at 220C for 15 minutes or until golden brown. ENJOY!




Bread with herbs

Since I have a set of mini molds, I divided my dough in balls of 150 grams each.


I made 2 plains without flavor, 2 with chili flakes, 1 with oregano, and 1 with rosemary. Add just a touch to don't overpower them. 




Bake it at 220C for 25 minutes or until golden brown. ENJOY! 

I bake all of them at the same time to make an efficient use of the oven.


And the butter? I always have fresh herbs in my garden. I mix butter with chives, another with rosemary, and the other with oregano and garlic.....ENJOY!

Pastel de salmón

  


Vi esta receta de salmón en una revista mientras esperaba en el dentista. Como no pude escribirlo, no es lo mismo. Sin embargo, lo hice con los ingredientes que tenía en casa.

Pastel de salmón

Masa
300 gramos de harina
150 gramos de mantequilla
1/2 cucharadita de sal
1/2 cucharadita de polvo de hornear
Agua según sea necesario

Coloque todos los ingredientes en un procesador de alimentos y agregue agua según sea necesario para hacer una masa suave. Colóquelo en una nevera durante 1 hora. Con un rodillo, aplanarlo hasta tener 2-3 mm de espesor. Colóquelo sobre papel pergamino en una bandeja para horno.

Relleno

300 gramos de salmón previamente cocido. Lo cociné en aceite de oliva a baja temperatura.
1/2 taza de crema
250 g de queso mascarpone o crema a temperatura ambiente
un manojo de ramitas de cebollino fresco o cualquier hierba o combinación que quieras usar finamente picada
3 dientes de ajo picados
aceite de oliva
1/2 jugo de limón
sal

En un sarten, agregue aceite de oliva. Cocine el ajo con las cebolletas hasta que esté fragante. Agregue la sal, el queso, la crema y el salmón cocido. Sazone con sal y limón. Mézclalo hasta que tengas una pasta. Distribuirlo en la mitad de la masa. Dóblalo y séllalo. Pintarlo con un huevo batido. Hornear a 165C por 25 minutos o hasta que esté dorado. ¡DISFRUTAR!



Salmon pie

 


I saw this salmon recipe in a magazine while I was waiting in the dentist. Since I couldn't write it down, it is not the same. However, I made it with the ingredients I had at home.

Salmon pie

Dough
300 grams of flour
150 grams of butter
1/2 teaspoon of salt
1/2 teaspoon of baking powder
Water as needed

Place all the ingredients in a food processor, and add water as needed to make a soft dough. Place it in a fridge for 1 hour. With a rolling pin, flatten it until you have 2-3 mm of thickness. Place it on parchment paper on an oven tray.

Filling

300 grams of salmon previously cooked. I cooked it in olive oil at low temperature.
1/2 cup of  cream
250 g mascarpone or cream cheese at room temperature
a bunch of sprigs fresh chives or any herb or combination that you want to use finely chopped
3 garlic clove chopped
olive oil
1/2 lemon juice
salt


In a pot, add olive oil. Cook the garlic with the chives until is fragrant. Add the salt, cheese, cream, and the cooked salmon. Season it with salt and lemon. Mix it until you have a paste. Distribute it in a half of the dough. Fold it and seal it. Brush it with a beaten egg. Bake it at 165C for 25 minutes or until is golden brown. ENJOY!
