Pavlova de frutillas y crema de vainilla



La temporada de la fresa está aquí, ¡y pude comprar una caja para disfrutar de un dulce al comienzo de esta primavera!

Pavlova

300 gramos de azúcar impalpable

240 g de claras de huevo (6 claras de huevo)

1 pizca de crema de tártaro o sal

1 cucharadita de vinagre

1 cucharadita de pasta de vainilla


Batir las claras de huevo con la crema de tártaro o sal hasta que haya formado picos fuertes. Agregue el vinagre y la pasta de vainilla y envuelva suavemente. Colóquelo sobre papel de horno y hornee a 110 ° C durante 90 minutos. Déjelo por 2 horas en el horno con la puerta cerrada. Luego transfiéralo a la nevera.


Lave las fresas, córtelas en rodajas y agregue un poco de azúcar, vainilla y una cucharadita de su licor favorito si lo desea.


Haz una crema de crema de vainilla. Deja enfriar.

Coloque una pavlova fría en un plato, agregue encima crema de crema de vainilla y fresas encima. ¡DISFRUTAR!

Strawberry time...Pavlova with Strawberry and Vanilla Custard



Strawberry season is here, and I could buy a box to enjoy a sweet in the start of this spring!

Pavlova

300 grams of sugar
240 g of egg whites (6 egg whites)
1 pinch of cream of tartar or salt
1 teaspoon of vinegar
1 teaspoonful of  vanilla paste

Beat the egg whites with the cream of tartar or salt until you have formed strong picks. Add the vinegar and vanilla paste and fold it softly. Place it over parchment paper, and bake it at 110C for 90 minutes. Leave it for 2 hours in the oven with closed door. Then transfer to the fridge.

Wash strawberries, slice them and add some sugar, vanilla, and a teaspoon of your favorite liquor if you want.

Make a vanilla custard cream. Let it cool.

Place a cool pavlova on a plate, add on top vanilla custard cream, and strawberries on top. ENJOY!

Pan rustico con masa madre


Me encanta el pan, y como tengo mi masa madre, solo hago pan casero. Estoy probando diferentes proporciones de harina cada vez, y esta es la que más nos gusta.



365 gramos de agua

140 gramos de masa madre 

130 gramos de harina einkorn

50 gramos de harina de trigo integral

300 gramos de harina de pan

10 gramos de sal



Mezcle todos los ingredientes excepto la sal y déjelo reposar durante 30 minutos. Agregue la sal y mezcle durante 7 minutos. Dobla los 4 lados cada 30 minutos 8 veces (4 horas) a temperatura ambiente. Manténgalo a temperatura ambiente durante otras 2 horas. Dale forma y ponlo en la nevera durante 16 horas. Hornee en un horno precalentado a 475F en una olla de fierro durante 30 minutos con tapa y 15 minutos sin tapa. ¡DISFRUTAR!




Rustic bread with sourdough starter


I love bread, and since I have my sourdough starter, I only make home bread. I'm trying different flour proportions every time, and this one is the one that we like the best

365 grams of water
140 grams of sourdough starter
130 gram einkorn flour
50 grams whole wheat flour
300 grams bread flour
10 grams of salt

Mix all the ingredients except salt, and let it rest for 30 minutes. Add the salt, and mix for 7 minutes. Fold the 4 sides every 30 minutes 8 times (4 hours) at room temperature. Keep it at room temperature for another 2 hours. Shape it, and put it in the fridge for 16 hours. Bake it in a preheated oven at 475F in a dutch oven pot for 30 minutes 2ith lid and 15 minutes without lid. ENJOY!

Curry de Verduras y Gambas de Goa



Volveremos a la comida India nuevamente. Este es un curry de Goa, usan más leche de coco. Puede reemplazar las gambas con paneer o pollo.

Curry de Verduras y Gambas de Goa 

1 cucharada de gee

3 dientes de ajo picados

1 trozo de jengibre (2 cm) picado

1/2 cebolla picada

2 tomates picados

1/2 cucharadita de cúrcuma molida

1/2 cucharadita de chile en polvo Cachemira

1 cucharadita de comino molido

1 cucharadita de cilantro molido

1 cucharadita de semillas de mostaza negra

200 g de leche de coco

½ cucharadita de sal

200 gramos de verduras variadas

3 langostinos crudos, pelados por persona

hojas frescas de cilantro, para decorar

limones, cortados en gajos, para servir



Calienta el gee. Agregue las semillas de mostaza, una vez que estén apareciendo, agregue la cebolla, el ajo y el jengibre. Déjalo cocinar por 5 minutos. Agregue el tomate, 1 taza de agua, 200 ml de agua de coco y todas las especias. Pruébelo para picante y sal. Agregue los vegetales descongelados y cocínelos por 7 minutos. Agregue las gambas y cocine por 5 minutos. Servir con arroz basmati.





Goa Prawn and Vegetable curry



We are going back to Indian food again. This is a curry from Goa, they use more coconut milk. You can replace the prawns with paneer or chicken.

Goa Prawn and Vegetable curry

1 tablespoon of gee
3 garlic cloves chopped
1 piece of ginger (2 cm) chopped
1/2 onion chopped
2 tomatoes, chopped
1/2 teaspoon ground turmeric
1/2 teaspoon chili powder Kashmir
1 teaspoon of ground cumin
1 teaspoon ground coriander
1 teaspoon of black mustard seeds
200 g coconut milk
½ teaspoon of salt
200 grams assorted vegetables
3 raw prawns, peeled per person
fresh coriander leaves, for garnish
lemons, cut into wedges, to serve

Heat the gee. Add the mustard seeds, once they are popping, add the onion, garlic, and ginger. Let it cook for 5 minutes. Add the tomato, 1 cup of water, 200 ml of coconut water, and all the spices. Taste it for spiciness and salt. Add  the defrost vegetables, and cook it for 7 minutes. Add the prawns, and cook it for 5 minutes. Serve it with basmati rice.

Focaccia Romero Cebolla Ajo y Patatas y Tartaleta de Frutillas






Si hay algo que sabemos ahora, es que se han acumulado algunos kilos adicionales en nuestros cuerpos durante esta cuarentena ... que vamos a hacer........¡sigamos comiendo!



Focaccia Romero Cebolla Ajo y Patatas

240 g de agua

400 g de harina

100 gramos de puré de papas (frío)

1 cucharadita de azúcar

5 g de levadura seca instantánea

2 cucharadas de masa madre 

3 cucharaditas de orégano

40 g de aceite de oliva

 1 cucharadita de sal



1 cebolla

3 dientes de ajo

4 papas

Romero



Picar la cebolla y el ajo, y saltearlos. Deja enfriar.

Corta las papas en rodajas. Saltearlos. Deja enfriar.

Lave y pique el romero fresco u otra hierba.



Mezcle agua, azúcar y levadura. Déjala espumar por 10 minutos. Mezcle todos los ingredientes restantes y agregue la levadura espumosa. Mezclar por 10 minutos. Déjelo crecer durante 1 hora y golpéelo. Déjalo crecer por otra hora. Con la mano grasienta, colóquelo en una bandeja a prueba de horno. Darle unos toques de aceite de oliva, sal y romero. Organice una línea de papas y una línea de cebolla / ajo. Hornee en un horno precalentado a 375F durante 25 minutos o hasta que estén doradas. ¡DISFRUTAR!

 Encontré fresas el último día que fui a comprar comestibles antes de la cuarentena ... ¡No pude resistirme a comprarlas para un buen pastel!









Focaccia Rosemary Onion Garlic and Potatoes






If there is something that we know now, is that some extra kilos have been accumulated in our bodies during this quarantine.....let's keep eating!

Focaccia Rosemary Onion and Potatoes

240 g of water 
400 g of flour 
100 grams mashed potatoes (cold)
1 teaspoon of sugar 
5 g of instant dry yeast 
2 tablespoons of sourdough starter
3 teaspoons of oregano 
40 g of olive oil
 1 teaspoon of salt 

1 onion
3 cloves of garlic
4 potatoes
rosemary

Chopped the onion and garlic, and sautee them. Let it cool.
Slices the potatoes and slice them. Sautee them. Let it cool.
Wash and chop fresh rosemary or another herb.

Mix water, sugar, and yeast. Let it foam for 10 minutes. Mix all the remaining ingredients, and add the foamy yeast. Mix it for 10 minutes. Let it rise for 1 hour, and punch it down. Let it rise for another hour. With greasy hand, place it on a oven proof tray. Sprinkle with olive oil, salt and rosemary. Arrange one line of potatoes, and one line of onion/garlic. Bake it in a preheated oven at 375F for 25 minutes or until golden brown. ENJOY!

I found strawberries the last day I went to shop for groceries before the quarantine....I could'n resist to buy them for a good pastry!

Galaktoboureko y Spinakopita





Me encanta Galaktoboureko y Spinakopita, no lo he hecho en mucho tiempo, pero tenia un paquete de masa de filo, un poco de queso feta y espinacas ... fue nuestra cena

Espinakopita

1 paquete de masa filo (usé la mitad para espinakopita y la otra mitad para galaktoboureko)

450 gramos de espinacas

3 dientes de ajo

120 gramos de queso feta

orégano

1 huevo

mantequilla y aceite de oliva


Lavar y cocer al vapor las espinacas. Deja enfriar. Picarlo y sacar toda el agua. Mezclarlo con queso feta, orégano, huevo y ajo picado. Derrita la mantequilla y mézclela con aceite de oliva. Tome un trozo de masa filo y cepíllelo con una mezcla de mantequilla y aceite de oliva, dóblelo por mucho tiempo en 3. Coloque una cuchara del relleno en un lado y dóblelo en forma de triángulo. Pincelar con aceite de oliva y hornear a 375F hasta que estén doradas.

Si no eres bueno haciendo triángulos, dóblalo en forma de cigarrillo. ¡DISFRUTAR!








Galaktoboureko

3 huevos grandes

110 g de azúcar

1 cucharadita de extracto de vainilla

95 g de sémola fina

Rallado 1 naranja

1 cucharadita de agua de azahar

1 litro de leche tibia

Masa de filo

JARABE

350 g de azúcar

300 ml de agua

zumo de naranjas 

ralladura de 1 naranja

En una olla, mezcle los huevos, el azúcar, el extracto de vainilla, la ralladura de naranja y el agua de azahar. Agrega la leche tibia. Lentamente, agregue la sémola y cocine revolviendo hasta que tenga una crema espesa. Deja enfriar.

En un molde grande a prueba de horno, coloque varias hojas de masa de masa filo (al menos 8 hojas) con mantequilla / aceite de oliva cepillado en el medio. Coloque la crema dentro y agregue encima 4 hojas de masa de hojaldre pinceladas con mantequilla derretida. Hornee en un horno precalentado a 350F hasta que estén doradas.

Mientras tanto, prepara el almíbar. Calienta el agua y el azúcar hasta que tengas un jarabe. Una vez que tenga el jarabe, agregue el jugo de naranja y la ralladura de naranja.

Una vez que el galaktoboureko esté horneado, sáquelo del horno y con un cuchillo afilado cortado en diagonal en ambos sentidos (como en el baklava). Agrega el almíbar encima. ¡Deja que se enfríe y disfruta con un café!







Galaktoboureko and Spinakopita





I love Galaktoboureko and Spinakopita, I have not make it in a long time, but since I had a package of phyllo dough, some feta and spinach.....it was our dinner

Spinakopita

1 package of phyllo dough (I used half for spinakopita and the other half for galaktoboureko)
450 grams of spinach
3 pieces of garlic
120 grams of feta cheese
oregano
1 egg
butter and olive oil

Wash and steam the spinach. Let it cool. Chop it and take all the water out. Mix it with feta cheese, oregano, egg and chopped garlic. Melt butter and mix it with olive oil. Take a piece of phyllo dough and brush it with a mix of butter and olive oil, fold it at long in 3. Place a spoon of the filling in one side, and fold it in triangle way. Brush it with olive oil, and bake it at 375F until golden brown. 

If you are not good doing triangles, fold it in a cigarette shape. ENJOY! 








Galaktoboureko

3 large eggs
125 g sugar
1 teaspoon of vanilla extract
95 g of fine semolina 
Grated 1 orange 
1 teaspoon orange blossom water
1 liter of warm milk
Phyllo dough

SYRUP
350 g of sugar
300 ml of water
2 orange juice 1 orange zest

In a pot, mix the eggs, sugar, vanilla extract, orange zest, and orange blossom water. Add the warm milk. Slowly, add the semolina and cook it stirring it until you have a thick cream. Let it cool.

In a big  oven proof mold, place several sheets of phyllo dough (at least 8 sheets) with butter/olive oil brushed in between. Put the cream inside, and add 4 sheets of phyllo dough with melted butter in between. Bake it in a preheated oven at 350F until golden brown.

In the meantime, make the syrup. Heat the water and sugar until you have a syrup. Once you have the syrup, add the orange juice and orange zest. 

Once the galaktoboureko is baked, teake it out of the oven, and with a sharp knife cut in diagonal in both ways (like in baklava). Add the syrup on top. Let it cool and enjoy with a coffe!!

Brioche relleno de queso feta y hierbas



¡Todavía tengo harina! ... la harina se está volviendo difícil de encontrar aquí, esperemos que pronto volvamos a la normalidad.

Tengo algunas hierbas frescas y un trozo de queso feta, y probé estos brioche rellenos que serví con una ensalada de tomates y  frittata de verduras  ¡Este pan es delicioso!
 



 Masa 140 ml de leche tibia 140 ml de agua tibia 1 cucharadita de levadura instantánea seca 2 cucharadas de masa madre 1 cucharadita de azúcar 10 gramos de sal 1 huevo 15 gramos de aceite de oliva 500 gramos de harina 75 gramos de papas hervidas Relleno 1 huevo Perejil, menta, albahaca, orégano, eneldo 120 gramos de queso feta 1 cucharada de leche Para el relleno mezclar todos los ingredientes. Masa Mezcle el agua y la leche con el azúcar y la levadura, deje que se forme espuma durante 10 minutos. Agregue la masa madre, el huevo y el aceite de oliva. Incorpore la harina y la sal, y mezcle hasta obtener una masa suave. Déjalo crecer por 2 horas. Dividirlo en 8 piezas (bolas). Déjalo reposar por 15 minutos. Con un uslero de forma de rectángulo y coloque una cucharada de relleno. Enróllalo 3/4 de largo. Con una tijera, corte las líneas y dóblelas en lados opuestos. Déjalo reposar durante 1 hora. Pincelar con un huevo, hornear a 375F durante 20 minutos o hasta que estén doradas. ¡Son deliciosos!













Lo comimos con una frittata


Brioche bread filled with feta and herbs



I still have flour!....flour is getting difficult to find here, let's hope that we will soon come back to normal.

I have some fresh herbs , and a piece of feta cheese, and I tried these filled brioche that I served with a vegetable frittata and tomato salad. This bread is delicious!
 



 Dough
140 ml of warm milk 140 ml lukewarm water 1 teaspoon dry instant yeast
2 tablespoons of starter sourdough 1 teaspoon of sugar sugar 10 grams of salt 1 egg 15 grams olive oil 500 grams of flour
75 grams boiled potatoes

Filling
1 egg
Parsley, mint, basil, oregano, dill
120 grams of feta cheese
1 tablespoon of milk

For the filling mix all the ingredients.

Dough
Mix the water and milk with the sugar and yeast, Let it foam for 10 minutes. Add the starter, egg, and olive oil. Incorporate the flour and salt, and mix it until you have a soft dough. Let it rise for 2 hours. Divide it in 8 pieces (balls). Let it rest for 15 minutes. Roll it in a rectangle shape, and place a tablespoon of filling. Roll it 3/4 of length. With a scissor, cut lines, and fold them in opposite sides. Let it rest for 1 hour. Brush it with an egg, Bake it at 375F for 20 minutes or until golden brown. They are delicious!
