Galletas de crema de limón y Galletas de pistacho
Al final del año, limpio mi congelador. Si es salado, hago una quiche, y si es dulce, hago galletas.
Lemond curd cookies and Pistachio cookies
At the end of the year, I clean my freezer. If it is salty, then I make a quiche, and if it is sweet, then I make cookies.
I found lemon curd and pistachio cream in the freezer, and I had orange syrup leftover from when I made candied oranges.....combining with the right proportion, and the cookies turn out to be delicious!
Lemon curd cookies
3/4 cup of lemon curd
2 cups of flour
2 eggs
70 grams of butter
1 1/2 teaspoon baking powder
4 tablespoons orange syrup
zest of 1 lemon
Combine the butter, eggs, and orange syrup. Beat it well until is creamy. Add the eggs and lemon curd. Mix it well. Add the baking powder, lemon zest and flour. If needed, add some water. My dough didn't need it. Make a cylinder and freeze it for 1 hour. Cut slices, and place a pistachio as a decoration. Bake it a 365F for 15 minutes or until golden brown. Enjoy!
Pistachio cookies
3/4 cup of pistachio paste
2 cups of flour
2 eggs
60 grams of butter
1 1/2 teaspoon baking powder
6 tablespoons orange syrup
Combine the butter, eggs, and orange syrup. Beat it well until is creamy. Add the eggs and pistachio paste. Mix it well. Add the baking powder, and flour. If needed, add some water. My dough didn't need it. Make a ball and freeze it for 1 hour. With your hands make small balls, and flatten them with your hands. make an indentation with a fork. Bake it a 365F for 15 minutes or until golden brown. Enjoy!

Galletas de limón/naranja y chocolate
Saca las masas de la nevera y coloca la masa de chocolate sobre la masa de cítricos. Enróllelo por el lado más grande y colóquelo en el congelador durante 1 hora. Sácalo del congelador, córtalos en rodajas y hornéalos a 325F en un horno precalentado durante 15-20 minutos. ¡DISFRUTAR!

Take the doughs out of the fridge, and place the chocolate dough over the citrus dough. Roll it by the larger side, and place it in the freezer for 1 hour. Take it out of the freezer, cut them in slices, and bake them at 325F in a preheated oven for 15-20 minutes. ENJOY!

Crepes de marisco y acelgas
La vida aquí se está poniendo ajetreada... mi borraja está en plena floración (¡prepararé un poco de té!), y mis hojas de remolacha son gigantes este año... ¡están listas para convertirse en Gozleme!
Seafood and swiss chard crepes
Life is getting busy here....my borage is in full blossom (I will make some tea!), and my beet leaves are giant this year....they are ready to be converted into Gozleme!
Seafood and swiss chard crepes
Crepes batter
60g olive oil
550g milk
250g flour
4 eggs
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon of sourdough (optional)
Oil for frying them
Mix all together with a hand blender, and set aside at room temperature for 1 hour. Before frying them, blend it again.
Place a thin coat of olive oil in a pan. heat it, and with a kitchen ladder, place some batter on the pan. Distribute evenly. Cook it for 1-2 minutes per side. Continue with the rest of the batter.
Bechamel sauce
4 tablespoons of butter
5 tablespoons all-purpose flour
650 ml whole milk
1 teaspoon salt
ground black pepper
ground nutmeg
In a pot at medium low heat, melt the butter and add the flour. Stir it and cook it for 2-3 minutes. Slowly, add the milk and continue beating until it thickens. Add the salt, nutmeg and pepper.
Filling
10 shrimps (chopped)
3 scallops (chopped)
Some swiss chard (you can use spinach)
3 garlic cloves
Salt
Pepper
Oregano
Olive oil
150 grams parmiggiano reggiano grated
Bechamel sauce
In a pan, heat some olive oil, and add the garlic. Then, add the shrimps and scallops. Then, add the swiss chard, and cook it until they are done. Season it with salt, pepper, and oregano. Let it cool. Add the parmiggiano reggiano cheese, and 4 tablespoons of bechamel sauce. You may add some milk to make the bechamel sauce more creamy. Mix it well. Place 1 1/2 tablespoon of this mix in each crepes, and fold it. Place each crepe in an oven proof dish. Cover it with the rest of the bechamel sauce, and place on top some grated cheese. Place it in a preheated oven at 365F for 15-20 minutes until the cheese has melted. ENJOY!
