Methi Malai Paneer, Badami Paneer Masala y Khoya Paneer

  



Necesitaba probar nuevos platos paneer; así, me tomé el tiempo de preparar cuatro nuevos.




Methi Malai Paneer (hecho con hojas secas de fenogreco)

300 gramos de paneer

2 cucharadas de ghee

1 cebolla picada

2 dientes de ajo y un trozo de jengibre (2 cm) hicieron una pasta juntos

4 tomates cortados en cubitos

1 cucharadita de cúrcuma

1/2 cucharadita o más de polvo de kashmiri de chile seco

1/2 cucharadita de sal

2 cucharadas de hojas de fenogreco / alholva

1 cucharada de cilantro picado

En una olla calienta el ghee, agrega la cebolla y la pasta de jengibre / ajo. Una vez que esté traslúcido, agregue los tomates cortados en cubitos, la sal, la cúrcuma y el chile en polvo. Déjalo cocer durante 5 minutos. Agrega 1/2 taza de agua. Déjalo cocinar por otros 5 minutos. Dejar enfriar y reservar. Una vez enfriado, licua en una licuadora.


Saltear los trozos de paneer hasta que estén dorados. Coloque el curry que licuó en una olla. Agrega el fenogreco y el cilantro. Ponlo a hervir. Agregue el paneer. Sirve caliente con arroz basmati .... ¡DISFRUTA!




Badami Paneer Masala

300 gramos de requesón (paneer), cortado en cubos de 1 pulgada

¼ taza de almendras molidas (badam)

2 cucharadas de ghee

1 cucharadita de semillas de hinojo

2 dientes de ajo y un trozo de jengibre (2 cm) hicieron una pasta juntos

1 cebolla mediana picada

3 tomates picados

1/2 cucharadita de chile rojo en polvo

1/2 cucharadita de cúrcuma en polvo

1 cucharadita de comino molido

1 cucharadita de sal

3 cucharadas de yogur

Cilantro picado para decorar


En una olla calienta el ghee, agrega la cebolla y la pasta de jengibre / ajo. Una vez que esté traslúcido, agregue las semillas de hinojo, sal, comino, cúrcuma, chile en polvo. Agrega los tomates cortados en cubitos. Déjalo cocer durante 5 minutos. Agrega 1/2 taza de agua. Déjalo cocinar por otros 5 minutos. Dejar enfriar y reservar. Una vez enfriado, licua en una licuadora.


Saltear los trozos de paneer hasta que estén dorados. Coloque el curry que licuó en una olla. Agrega las almendras molidas y el yogur. Ponlo a hervir. Agregue el paneer. Sirve caliente con arroz basmati .... ¡DISFRUTA!



Khoya Paneer

para Khoya

1 cucharada de ghee

1/2 taza de leche

1/2 taza y una cucharada de leche en polvo


Masala

1 cucharada de ghee

300 gramos de paneer en cubitos

1/2 a 3/4 taza de agua

1 cebolla picada

2 dientes de ajo y un trozo de jengibre (2 cm) hicieron una pasta juntos

1 cucharadita de comino

un trozo de canela (2 cm)

1 hoja de laurel

4 cardamomos enteros

2 clavos de olor

1 cucharadita de kasuri methi

1 cucharadita de cúrcuma

1 cucharadita de chile rojo cachemir en polvo

1/2 cucharadita de cilantro en polvo

1/2 cucharadita de garam masala

1 cucharadita de sal

4 tomates picados

Haz el khoya primero. En una sartén, caliente el ghee, agregue la leche. Luego agregue la leche en polvo. Cocine hasta que se separe de la sartén. Dejar de lado.

En una olla calienta el ghee, agrega la cebolla y la pasta de jengibre / ajo. Una vez que esté traslúcido, agregue el comino, la hoja de laurel, la canela, el cardamomo, el kasuri methi, el clavo, la cúrcuma, el chile en polvo, el cilantro en polvo, el gramo masala y la sal. Luego, agregue los tomates. Déjalo cocer durante 7 minutos. Agrega el khoya y mézclalo muy bien. Agrega el agua hasta que esté cremosa. Agregue el paneer. Déjalo cocer durante 5 minutos. Sirve caliente con arroz basmati .... ¡DISFRUTA!


Methi Malai Paneer, Badami Paneer Masala and Khoya Paneer

 



I needed to try new paneer dishes; thus, I made the tome to prepare four new ones.




Methi Malai Paneer (made with dry fenugreek leaves)

300 grams of paneer

2 tablespoons of ghee

1 onion diced

2 garlic cloves and one piece of ginger (2 cm) made a paste together

4 tomatoes diced

1 teaspoon of turmeric

1/2 teaspoon or more of dry chili kashmiri powder

1/2 teaspoon of salt

2 tablespoons of fenugreek/alholva leaves 

1 tablespoon chopped coriander


In a pot heat the ghee, add onion and ginger/garlic paste. Once it is translucent, add the diced tomatoes, salt, turmeric and chili powder. Let it cook for 5 minutes. Add 1/2 cup of water. Let it cook for another 5 minutes. Let it cool and set aside. Once is cooled, blend it in a blender.

Sautee the paneer pieces until they are golden brown. Place the curry that was blended in a pot. Add  the fenugreek and coriander. Bring it to boil. Add the paneer. Serve warm with basmati rice....ENJOY!




Badami Paneer Masala

3000 grams cottage cheese (paneer), cut into 1-inch cubes

¼ cup grinded  almonds (badam)

2 tablespoons of ghee

1 teaspoon fennel seeds

2 garlic cloves and one piece of ginger (2 cm) made a paste together

1 medium onion chopped

3 tomatoes chopped

1/2 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon ground cumin

1 teaspoon salt 

3 tablespoons of yogurt

Chopped coriander to decorate

In a pot heat the ghee, add onion and ginger/garlic paste. Once it is translucent, add the fennel seeds, salt, cumin, turmeric, chili powder. Add the diced tomatoes. Let it cook for 5 minutes. Add 1/2 cup of water. Let it cook for another 5 minutes. Let it cool and set aside. Once is cooled, blend it in a blender.

Sautee the paneer pieces until they are golden brown. Place the curry that was blended in a pot. Add  the almonds grinded and yogurt.  Bring it to boil. Add the paneer. Serve warm with basmati rice....ENJOY!



Khoya Paneer

for Khoya

1 tablespoon ghee 

1/2 cup of milk

1/2 cup and one tablespoon  of powdered milk

Masala

1 tablespoon ghee 

300 grams of paneer in cubes

1/2 to 3/4 cup of water

1 onion diced

2 garlic cloves and one piece of ginger (2 cm) made a paste together

1 teaspoon cumin

a piece of cinnamon (2 cm)

1 bay leaf 

4 whole cardamoms

2 cloves

1 teaspoon kasuri methi 

1 teaspoon turmeric

1 teaspoon kashmiri red chili powder 

1/2 teaspoon coriander powder

1/2 teaspoon garam masala

1 teaspoon salt

4 tomatoes chopped

Make the khoya first. In a pan, heat the ghee, add the milk. Then add the milk powder. Cook until it separates from the pan. Set aside.

In a pot heat the ghee, add onion and ginger/garlic paste. Once it is translucent, add the cumin, bay leaf, cinnamon, cardamom, kasuri methi, cloves, turmeric, chili powder, coriander powder, gram masala and salt. Then, add the tomatoes. Let it cook for 7 minutes. Add the khoya and comnine it very well. Add the water until is creamy. Add the paneer. Let it cook for 5 minutes. Serve warm with basmati rice....ENJOY!

Paneer Biryani y Ganesh Chaturthi

  




Ganesh Chaturthi es uno de los festivales más celebrados en India por los Hindúes, y es una celebración que también hacemos en casa. Este festival es para celebrar el nacimiento del Señor Ganesha ... El Señor Ganesha es el eliminador de obstáculos, trae orden en este universo y es el Dios de nuevos comienzos ...


Como de costumbre, hice Modak y Coconut ladoo. Sin embargo, probamos nuevos platos indios que queríamos probar, incluido Paneer Biryani. Tengo que admitirlo, ¡lo repetiré! .... ¡¡Estaba delicioso !!




Parece complicado, pero no lo es ... requiere organización ...

Paneer Biryani

Para el paneer

250 gramos de paneer en cubitos

1 taza de yogur

1 cebolla picada y frita (tiene que estar dorada como quemada)

2 cucharadas de cilantro picado

1 cucharada de menta picada

2 cucharadas de alholva

1/2 cucharadita de sal

1 cucharadita de gram masala

1/2 cucharadita de cúrcuma

1/2 cucharadita de chile kashmiri

Mezclar todos los ingredientes e incorporar el paneer para marinarlo. Déjelo en la nevera durante al menos 1 hora.






Arroz

2 tazas de arroz basmati

Lávelo y cocínelo hasta que esté firme y casi hecho (un poco crudo en el medio). Deja enfriar. Dividirlo en dos porciones.

Un poco de agua de azafrán y anacardos


Masala para el arroz

3 cucharadas de aceite

1 cucharada de ghee

2 cucharaditas de comino

4 cardamomo

2 dientes

1 hoja de laurel

1 cebolla picada

Hacer una pasta en el mortero con 3 dientes de ajo y 1 pieza de jengibre (2 cm)

2 tomates cortados en cubitos

1 cucharadita de sal

1 cucharadita de gram masala

1 cucharadita de cúrcuma

1 cucharadita de chile kasmiri en polvo

1 cucharada de cilantro picado

1/2 cucharadita de menta picada


En una olla, calienta el aceite y el ghee. Agrega el comino, y cuando esté saltando (reventando), agrega el cardamomo, el clavo y la hoja de laurel. Dejar  3 minutos para extraer los aromas.

Agrega la cebolla picada y la pasta de ajo y jengibre. Déjelo cocinar hasta que esté transparente. Agrega los tomates, la sal, el gram masala, la cúrcuma y el chile en polvo. Revuelva bien. agregue el cilantro y la menta. Agrega 1/4 taza de agua. Revuelva bien.

Encima de este masala, coloque una capa de una porción de arroz, luego coloque el paneer y cúbralo con el arroz restante. Decore encima con anacardo, arroz con azafrán y menta picada. Agrega 1/2 taza de agua. Coloca la tapa encima del arroz.


Cocine por 20 minutos a fuego medio / bajo. Esté atento a que el calor no queme el arroz. Luego, cocine por 10 minutos a fuego lento. Apaga el fuego y déjalo reposar durante 15 minutos. Mezclar con cuidado, y colocarlo en una bandeja ..... DISFRUTAR .... DISFRUTAR .... DISFRUTAR !!!













Paneer Biryani....Ganesha Chathurthi

 




Ganesh Chaturthi is one of the most celebrated festivals in India by the Hindus, and it is a celebration that we also make at home. This festival is to celebrate  the birth of Lord Ganesha......Lord Ganesha is the remover of obstacles, brings order in this universe and is the God of new beginnings...

As usual, I made Modak and Coconut ladoo. However, we tried new Indian dishes that we wanted to taste including Paneer Biryani. I have to admit, I will repeat it!....It was delicious!!




It seems complicated, but it's not....it requires organization...


Paneer Biryani

For the paneer

250 grams of paneer in cubes

1 cup of yogurt

1 onion diced and fried (it has to be brown like burned)

2 tablespoons chopped cilantro

1 tablespoon chopped mint

2 tablespoon of alholva

1/2 teaspoon of salt

1 teaspoon gram masala

1/2 teaspoon turmeric

1/2 teaspoon kashmiri chili


Mix all the ingredients, and incorporate the paneer to marinate it. Leave it in the fridge for at least 1 hour.






Rice

2 cups of basmati rice

Wash it and cook it until it is firm and almost done (little raw in the middle). Let it cool. Divide it in two portions.

Some cashew and saffron water. 


Masala for the rice

3 tablespoon of oil

1 tablespoon of ghee

2 teaspoons of cumin

4 cardamom

2 cloves

1 bay leaf

1 onion diced

Make a paste in the mortar with 3 garlic cloves and 1 piece of ginger (2 cm)

2 tomatoes diced

1 teaspoon of salt

1 teaspoon of gram masala

1 teaspoon of turmeric

1 teaspoon of kasmiri chili powder

1 tablespoon of chopped cilantro

1/2 teaspoon of chopped mint

Masala

In a pot, heat the oil and ghee. Add the cumin, and when it is jumping (popping), add the cardamom, cloves, and bay leaf. Leave it for 3 minutes to extract the aromas. 

Add the diced onion, and the garlic ginger paste. Let it cook until translucent. Add the tomatoes, salt, gram masala, turmeric and chili powder. Stir it well. add the cilantro and mint. Add 1/4 cup of water. Stir it well.  

On top of this masala, place a layer with one portion of rice, then place the paneer, and cover it with the remaining rice. Decorate on top with cashew, saffron rice, and chopped mint. Add 1/2 cup of water. Place the lid on top of the rice.

Cook it for 20 minutes at low/medium heat. Watch for the heat not to burn the rice. Then, cook it for 10 minutes at low heat. Turn the heat off, and let it rest for 15 minutes. Mix it carefully, and place it on a tray.....ENJOY....ENJOY....ENJOY!!!

Mas recetas con pesto

 





Y la imaginación sobre cómo usar el pesto continua ...
A mi hija le encanta el pesto ... por lo tanto, agrego pesto a mi pan blanco tradicional para sándwiches para preparar su almuerzo para el colegio

Pan blanco

300 g de harina de pan

1/2 cucharadita de sal

1 cucharadita de azucar

2 cucharadas de leche en polvo

2 cucharaditas de levadura seca instantánea

1 cucharada de masa madre

140 g de agua

1 huevo

pesto


Combine todos los ingredientes y amase durante 10 minutos. Déjelo reposar durante 1 hora. Con un rodillo, haz un rectángulo. Unte el pesto y enróllelo. Colóquelo en un molde de vidrio durante 1 hora (tiene que subir 3/4 del molde). Hornee en horno precalentado a 370F durante 25 minutos o hasta que esté dorado.





Galletas al pesto

200 gramos de harina
100 gramos de mantequilla
1/2 cucharadita de levadura en polvo
1/2 cucharadita de sal
agua según sea necesario

Mezclar todos los ingredientes hasta obtener una masa suave y moldeable con un rodillo. Ponlo en el frigorífico durante 30 minutos.

Con un rodillo haz un rectángulo. Unte el pesto en la mitad de la masa y espolvoree un poco de queso parmigiano rallado. Enróllelo y congélelo durante 30 minutos. Córtelo y hornee en horno precalentado a 350F durante 15 minutos o hasta que esté dorado. ¡DISFRUTAR!

My daughter loves pesto.....therefore, I add pesto to my traditional white bread for sandwiches for making her lunch for school

White bread

300 g bread flour

1/2 teaspoon salt

1 teaspoon of sugar

2 tablespoons powdered milk

2 teaspoons instant dry yeast

1 tablespoon sourdough

140 g water

1 egg

pesto


Combine all ingredients and kneed for 10 minutes. Let it rise for 1 hour. With a roller pin, make a rectangle. Spread pesto and roll it. Place it in a glass mold for 1 hour (it has to rise 3/4 of the mold). bake it at preheated oven 370F for 25 minutes or until golden brown.





Biscuits with pesto

200 grams of flour
100 grams of butter
1/2 teaspoon baking powder
1/2 teaspoon salt
water as needed

Mix all the ingredients until you have a dough that is soft and can be molded with a roll pin. Place it in the fridge for 30 minutes. 

With a roller pin make a rectangle. Spread pesto in 1/2 of the dough and sprinkle some parmigiano grated cheese. Roll it and freeze it for 30 minutes. Cut it and bake it at preheated oven 350F for 15 minutes or until golden brown. ENJOY!

Pan relleno de pesto

  





Me encanta el pesto .... Me encanta cualquier tipo de comida, pero el pesto está en mis raíces ya que mi Nonno era de Rapallo, Liguria. Como de costumbre, este año planté albahaca para ensaladas, pizzas, sándwiches y pesto. Sin embargo, estoy comiendo tanta albahaca que no sé qué más hacer !!!! ... Estoy haciendo pesto y lo congelo para el invierno.


Hice este pan al pesto, y estaba delicioso


Pan relleno de pesto

220 gramos de agua

350 gramos de harina de pan

100 gramos de harina integral

1/2 cucharadita de levadura instantánea

2 cucharadas de masa madre

2 cucharadas de leche en polvo

1 cucharadita de sal

1 huevo

Mezcle todos los ingredientes secos y agregue el agua, la masa madre y el huevo. Amasarlos durante 10 minutos. Déjelo reposar durante 90 minutos. Con un rodillo, haga un rectángulo y rellénelo con pesto. Enróllalo y haz una U. Trenzelo y déjelo crecer durante otros 60 minutos. Unte con aceite de oliva y espolvoréelo con queso parmiggiano rallado. Hornee en horno precalentado a 375F durante 20 minutos o hasta que esté dorado. ¡Disfrutar!
