Galette de Espinacas, Setas y Feta y Flan a l'Alsacienne



Este postre llamado Flan a l'Alsacienne (también del mismo libro) es fácil, simple y delicioso. No pude dorarlo en la parte superior, pero estaba muy rico de todos modos.

Flan a l'Alsacienne

relleno

2 manzanas (yo usé manzanas gala)
1/2 taza de cáscara de naranja confitada
1 cucharada de mantequilla
1 cucharada de licor de naranja

En una sartén, calentar la mantequilla y agregar las manzanas en rodajas y cáscara de naranja confitada. Cocine durante 3 minutos, y flambear con el licor. Ponga a un lado.

relleno:

500 ml de leche
125 gramos de azúcar
1 cucharadita de harina para todo uso
1/4 taza de maicena
extracto de vainilla
2 huevos

Calentar la leche con el azúcar. Ponga a un lado. Mezclar los huevos con el extracto de vainilla, la harina y maicena. Batir en la leche y calentar de nuevo para hacer una crema pastelera.

Distribuya la fruta en moldes apto para horno, cubrir con crema pastelera, espolvorear con azúcar ..... y gratinar.... DISFRUTE!



Galette de Espinacas, Setas y Feta

A mi hija le encanta la espinaca. Tengo que cocinar con espinacas casi todos los días , por lo que siempre tengo en la nevera . Quería probar algo nuevo con algunas sobras que yo tenía en mi nevera.

masa

2 taza de harina para todo uso
1/2 cucharadita de sal
1/2 taza aceite de oliva
2 cucharaditas de zaatar (especias ) . Usted puede utilizar el orégano , el tomillo o albahaca seca.
Agua , según sea necesario

Combine la harina, zaatar y la sal en un tazón. Añadir el aceite de oliva y mezclar bien . Añadir agua necesaria para formar una masa que es elástica pero no pegajosa . Dejar reposar al menos 2 horas en la nevera .

relleno

300 gramos de espinacas
1 puerro
2 huevos
Un pedazo de queso feta . Cerca de 80 gramos
Algo de queso parmesano reggiano rallado . Cerca de 50 gramos.
sal
orégano
pimienta
aceite de oliva
ajo
Setas.

Lavar las espinacas. Picar y secar.

En una olla, caliente aceite de oliva y saltear los puerros . Sazonar con sal y pimienta. Agregue la espinaca. Cocine por 5 minutos .

Cuando esta mezcla esté fría , añadir el ajo y el orégano. Incorporar el queso feta en trozos, queso parmesano y los huevos . Revuelva hasta que se mezclen .

Divida la masa en 6 pedazos , y rodar en círculos. Coloque un poco de relleno en el interior , pero no en las orillas.



Cerrarlo

Limpie algunas setas, corte en rodajas y coloque encima

 Cocinar en el horno precalentado a 380F hasta que se cocine y  se dore. Me tomó 35 minutos. Yo estaba horneando pan a la vez ..... DISFRUTE!







Spinach, Mushroom and Feta Galette and Flan a l'Alsacienne.....



This dessert called Flan a l'Alsacienne (also from the same book) is easy, simple and delicious. I couldn't broil it on top, but it was good anyway.

Flan a l'Alsacienne

Filling

2 apples (I used gala apples)
1/2 cup Candied orange peel 
1 tablespoon of butter
1 tablespoon Orange liqueur

In a pan, heat the butter and add the sliced apples and candied orange peel. Cook it for 3 minutes, and flambe with the liqueur. Set aside.


Filling:

500 ml of milk
125 grams of sugar
1 teaspoon all purpose flour
1/4 cup of cornstarch
Vanilla extract
2 eggs

Heat the milk with the sugar. Set aside. Mix the eggs with the vanilla extract, all purpose flour and cornstarch. Whisk into the milk, and heat it again to make a pastry cream.

Distribute the fruit in ramekins, cover them with pastry cream, sprinkle with sugar.....and....ENJOY!



 Spinach Mushroom and Feta Galette

My daughter loves spinach. I have to cook with spinach almost everyday; therefore, I always have it in the fridge. I wanted to try something new with some leftovers that I had in my fridge.

Dough

2 cup all purpose flour 
1/2 Teaspoon salt 
1/2 Cup olive oil

2 teaspoons of zaatar (spices). You can use oregano, thyme or dry basil.
Water as needed


Combine the flour, zaatar and salt in a bowl.  Add the olive oil and mix it well. Add necessary water to form a dough that is elastic but not sticky. Let it rest for at least 2 hours in the fridge.

Filling

300 grams of baby spinach
1 leek
2 eggs
A piece of feta. About 80 grams
Some parmiggiano reggiano grated. About 50 grams.
Salt
Oregano
Pepper
Olive oil
Garlic
Mushrooms.

Wash the spinach . Chopped them and dry them.

In a pot, heat olive oil and sautee the leek. Season it with salt and pepper. Add the spinach. Cook it for 5 minutes.

When this mixture is cold, add the garlic and oregano. Incorporate the feta cheese in pieces, the parmiggiano reggiano cheese and eggs. Stir it until combined.

Divide the dough in 6 pieces,and roll it in circles. Place some filling inside, but no in the borders.



Close it

Clean some mushrooms, slice it and put them on top

 Cook it in a preheated oven at 380F until it is cook and golden. It took me 35 minutes. I was baking bread at the same time.....ENJOY!

Croissant con Almendras y Lunas a la Vainilla....



Croissant aux Amandes (de mi libro realmente favorito Patisserie: Mastering the Fundamentals of French Pastry")

Masa

He hecho tres tipos de masa de croissant , esta es la que mas nos gusta ....

Hice el total de la masa , pero para  este croissant  sólo se utiliza 1/3. de esta masa y me salieron 14 croissants .... la masa restante ..... preparese ..... más pasteles venir !

500 gramos de harina todo uso
60 gramos de azúcar
10 gramos de leche en polvo
12 gramos de sal
100 gramos de mantequilla ( temperatura ambiente )
4 cucharaditas de levadura seca (yo usé subida rápida ) . La receta requiere 25 gramos de levadura fresca , pero no tengo aquí.
230 ml de agua fría
250 gramos de mantequilla ( fría )

Mezclar todos los ingredientes secos ( salvo la mantequilla fría ) en un bol, y añadir poco a poco el agua para amasar . Amasar hasta que este elástica y suave ( alrededor de 7 minutos ) a velocidad media . Aplanar la masa en un rectángulo, y coloque la mantequilla dentro. Cerrar esta masa. Cubra con una envoltura de plástico , y refrigere por 2 horas .



Siga el mismo patrón de estirado con uslero que el que aparece en Feullitage Inverse

Relleno de Almendras

90 g de almendras molidas
60 g de azúcar glas
1/2 huevo
35 g de mantequilla (blanda)
1 cucharada de maicena
1/2 cucharadita de esencia de almendra

Moler las almendras, y mezclar con el azúcar, la mantequilla, el huevo, la maicena y la esencia de almendra hasta obtener una pasta como una crema. Si falta humedad agregue mas huevo, si esta muy humeda agregue mas maicena.

Tome 1/3 de la masa, y rodar en un rectángulo. Cortar triángulos con una base de 5 cms. Ponga una cucharadita de pasta de almendra en la base. Cierre y ruede como se muestra en las fotos de abajo.





Pincelar con una yema de huevo, espolvorear un poco de azúcar y rodajas de almendras. Déjelo leudar durante 2 horas.


Precaliente el horno a 350 F, y cocine por 12-15 minutos.

DISFRUTAR! ..... Mira cómo quedo con varias hojas es esta masa ..... yo los hice en la noche del sábado, y fue nuestro desayuno en la mañana del domingo ......



















 Se sirve un cappuccino conmigo y conversamos soñando que estamos en Paris?











Se utiliza la misma pasta que los croissants. Yo use 1/3 de la masa, y me dio 14 lunnetes.

Crema pastelera
1/2 vaina de vainilla
250 ml de leche
1 cucharadita de mantequilla
2 yema de huevo
50 gramos de azúcar
1 cucharada de harina
2 cucharada de almidón de maíz

Tome las semillas de vainilla, y agregarla a la leche con mantequilla. Calentar hasta que este tibio.

Mezclar las yemas con el azúcar, la harina y el almidón de maíz hasta que estén bien combinados. Agregue la leche y revuelva bien. Coloque esta mezcla en el fuego y caliente hasta que esté espeso. Deje que se enfríe.

Aplanar la masa y cortar tiras de 1,5 cm de ancho. Retuerzala.


Cierre el circulo

Llevela hacia abajo y unala. Deje leudar por 2 horas

Rellene los hoyos con crema pastelera


Hornee a 350 ° F en el horno precalentado durante 12-15 minutos. Pincele los pasteles calientes con un jarabe. En mi caso, he utilizado mermelada de albaricoque. DISFRUTE!

Croissant aux Amandes (from my really favourite book now....Mastering the Fundamentals of French Pastry)

Dough

I have done three types of croissant dough, this is the one that we like the best....

I make the full amount of dough, but to make this croissant I only used 1/3. of this dough....the remaining dough.....be prepared.....more pastries to come!!

500 grams of all urpose flour
60 grams of sugar
10 grams powdered milk
12 grams of salt
100 grams of butter (room temperature)
4 teaspoons of dry yeast (I used quick rise). The recipe calls for 25 grams of fresh yeast, but I don't have it here.
230 ml cold water
250 grams of butter (chilled)

Mix all the dry ingredients (except chilled butter) in a bowl, and gradually add the water to knead it. Knead it until is elastic and soft (around 7 minutes) at medium speed. Flatten the dough in a rectangle, and place the butter inside. Close this dough. Cover with a plastic wrap, and chill it for 2 hours.



Follow the same pattern of rolling then the one in Feullitage Inverse

Almond Filling

90 g ground almonds
60 g icing sugar
1/2 egg
35 g butter (softened)
1 tablespoon cornstarch
1/2 teaspoon of almond essence

Grind the almonds, and mix with the sugar, butter, egg, cornstarch and almond essence until you have a paste like a cream.

Take 1/3 of the dough, and roll it into a rectangle. Cut triangles with a base of 5 cms. Place a teaspoon of almond paste in the base. Close it and roll it as it is shown in the pictures below.





Brush with an egg yolk, sprinkle some sugar and sliced almond. Let it rise for 2 hours.


Preheat the oven at 350 F, and cook it for 12-15 minutes.

ENJOY!!.....look how flaky is this dough.....I make them on Saturday night, and it was our breakfast on Sunday morning......































 Lunettes a la Vanille

You use the same dough as the croissants. I use 1/3 of the dough, and gave me 14 lunettes.

Pastry Cream
1/2 vanilla bean
250 ml of milk
1 teaspoon of butter
2 egg yolk
50 grams of sugar
1 tablespoon of flour
2 tablespoon of corn starch

Take the vanilla seeds, and add it to the milk ad butter. Warm it until medium hot.

Mix the egg yolks with the sugar, flour, and corn starch until well combined. Add the milk and stir it well. Place this mixture in the stove until is thick. Let it cool.

Flatten the dough, and cut strips of 1.5 cm wide. Twist it.


Close the circle

Press it down to make two holes. Let it rise for 2 hours

Fill the holes with pastry cream


Bake it at 350F in a preheated oven for 12-15 minutes. Brush the hot pastries with a syrup. In my case, I used apricot jam. ENJOY!







This dough is really flaky.
