I have a good friend who was diagnosed with high cholesterol.....I promised him that I will try to make him some cookies for his coffee....
Searching for more healthy cookies with oats, flax seeds, and olive oil (good products for high cholesterol), I found two cookies Almond-Cranberry Quinoa Cookies and Oatmeal Cranberry Flaxseed. I have to admit that the Oatmeal Cranberry Flaxseed is not one of my favourites, to be honest I did not like it, but when you have a restricted diet and are craving for something sweet it is a good option. However, the Almond-Cranberry Quinoa Cookies I really liked it!.....The combination of dry ingredients with the cooked Quinoa has an interesting texture for me.....
I have adapted both recipes.

1 cups wheat flour
Pinch of salt
1 teaspoon baking powder
1 teaspoon baking soda
50 grams of butter
1/3 cup of sugar plus 1 tablespoon of honey
2 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup cooked quinoa, cooled
1 cup old-fashioned oats
½ cup dried cranberries
2/3 cup slivered almonds
Preheat oven to 375°.
Mix the flour, oats, salt, and cranberries.
Beat the butter with the sugar and honey until is creamy. Incorporate the eggs and extracts. Add the cooled quinoa.
In a rainy motion, add the mix of flour, oats, salt, and cranberries. Incorporate the almonds and mix well.
With a tablespoon, put dough on a baking paper. Cook them for 10-12 minutes or until golden brown. Today, I bake them for us. I did not have cranberries, but used dry apricots instead. They taste very good.....ENJOY!!

1/2 Cup Olive oil
1/2 Cup brown sugar
1 omega-3 egg
1 Teaspoon vanilla extract
1/2 Cup all-purpose flour
1/2 Cup flaxseed, ground
1/2 Teaspoon baking soda
1/2 Cup dried cranberries
1 Cup rolled oats
1/2 cup of pistachios
Preheat oven to 350°F. In a bowl, mix oil and sugar together. Add egg and vanilla, mix them well.
In a rainy motion, add flour, ground flaxseed and baking soda. Mix it until it is homogeneous. Incorporate the cranberries and rolled oats.
With a tablespoon, distribute pieces of dough on a baking paper. Cook it for 12 minutes, or until golden. Taste it....Enjoy if you can!...I did not like them!!
