Cheese and Onion Tart



Hello again!....I was about to publish this recipe, when I had an unexpected emergency surgery.....appendectomy....I'm very well right now, but it was one month prior to our trip. Thus, my focus was only in recovering myself.....It was a time for myself....

Every time we travel, I cleaned my fridge and my pantry as much as possible. One of the things that I love to make in this cases, is "Tarta de Cebollas y Queso". I tried this tarta for the first time in Argentina, and I love it.....It is simply, healthy and delicious!!!






700 grams of onions  plus 2 leeks
250 grams of cheese (I used a combination of havarti and pecorino that I had in my fridge)
salt
pepper
oregano
Olive oil
4 eggs
3-4 tablespoons of flour

Dough (you can use your own tart dough)

1 1/2 cup of flour
2 tablespoons of butter
salt
water

Combine the flour, salt and butter. Add water as necessary to make a firm dough. Leave it in the fridge for 30 minutes. Roll it thin. In a round cake mold, place a layer of dough and brush it with olive oil. Then, place a second layer, and again another brush with olive oil. I like to have at least 4 layers. Leave the mold in the fridge.

Cut the onion in julienne strips. Sautee until they are brownish, and add salt, pepper and oregano. Turn off the pot, and add the 3-4 tablespoons of flour. This is to dry the liquid. When it is warm, add the eggs and the grated cheese. Heat the oven up to 380F. Place the onion mix in the mold.



Bake it for 30-40 minutes until it is fully cooked. Serve it warm or cold with salad.....ENJOY!
