Zucchini Salad and Bell Pepper salad
These two salads are very simple and delicious....ideal for these hot summer days
Zucchini Salad
4 Zucchini
cumin
garlic
olive oil
mint, cilantro, parsley, lemon, salt, garlic and olive oil
feta cheese
Slice zucchinis and marinate them with cumin and garlic. Leave it for 1 hour. Roast them in a pan or griddle. Place it in a salad bowl. Make a dressing by combining chopped mint, cilantro, parsley, lemon, garlic and salt. Add it to the roasted zucchinis. Sprinkle with feta cheese on top. Serve it warm or cold.
Tri-colour bell pepper salad
3 bell peppers (red-orange-yellow)
Olive oil
Basil
garlic
salt
pepper
feta cheese
olives
balsamic vinegar
Wash the 3 bell peppers (red-orange-yellow), and grill them to peel them off. Peel them and take out the seeds. Cut them in small pieces. Place it in a salad bowl with olive oil, basil, garlic, salt, pepper, olives and feta cheese. Sprinkle balsamic vinegar. ENJOY!

I have been eating lots of zucchini last two weeks. Time to switch to peppers :-)) Your salads look so flavourful and yummy.
