Vegetarian Burgers



I love to eat home made vegetarian burgers....tasty, healthy, and you can add whatever you have in the fridge!

Vegetarian Burgers

1 cup dry red beans
1/2 cup dry chickpeas
2 carrots grated
1 teaspoon fresh grind cumin
1/2 teaspoon fresh grind coriander seeds
1 teaspoon smoke Spanish paprika
1 1/4 cup of breadcrumbs (more or less)
2 garlic cloves minced
1 teaspoon of oregano
salt
olive oil
Breadcrumbs. I make my own bread, and all leftovers are converted in breadcrumbs. I maintain them in the freezer.

Soak red beans and chickpeas overnight. Cook them in a pressure cook for 20 minutes. Let the pressure release by itself. Mash them with a fork. Add the spices, carrots, salt and garlic. Mix them well. Add breadcrumbs until you have the consistency of a burger. Make patties, and place them over parchment paper. Brush them with olive oil. Bake them at 350F for 10 minutes per side. You can fry them as well.

I made burgers with mayonnaise, tomato, kimchi, bell pepper stir fry in olive oil and garlic, and mustard.

I make my own burger's bread. I use Hilmar's recipe.....it is the best!!......ENJOY!!

  2. I love the combination of red bean and chickpea. It looks like it makes a solid hearty burger. Being vegan, I also appreciate that the recipe does not call for an egg. Looks really good.
