Pastelillos al Horno from the Clarisas Nuns....


Another delicious recipe from the book "Dulces y Postres de las Monjas Clarisas"....This filled little pastry should be round, but I made it in a half moon shape. I found that its is not very easy to make this dough, but it is delicious and soft......

Pastelillos al Horno 

1/8 l of milk
250 grams of flour
30 grams of butter
150 grams of plum jam (It was a gift from my friend O.)
1 teaspoon of yeast
50 grams of icing sugar (I did not use it)
1 teaspoon of vanilla powder (I use vanilla beans seeds)
1 lemon zest
1 teaspoon of rum
cinnamon
salt
butter


In a saucepan, warm half of the milk, add the yeast and four tablespoons of flour. Stir until a thick dough. Let it rest to do a sponge (15 minutes). In another pan, heat the remaining milk with the butter, add the flour, lemon and vanilla seeds. Knead to avoid lumps. Mix both mixtures together, and let it rise for 30 minutes.

Sprinkle the table with flour. Roll out and cut circles. Place in the center of the sweet plum mixed with rum and cinnamon. Close the circles. Grease with melted butter and place in a baking dish. Turn on the oven at 300F for 5 minutes and turn off. Place the cakes in the oven and let it rise for 30 minutes.

Preheat oven to 350F and cook for 25 minutes or until golden brown. Sprinkle with icing sugar (I did not). ENJOY!
