Bread filled with Zucchini or Spinach....and Memories of Kuwait City....


 I never expected to go one day to Kuwait, but they day finally came. It was only for a couple of days, but I liked it. It is a mix between modern and tradition style, with a touch of elegance. The food was delicious with hints of mint and cardamom. I loved the saffron tea....

In a mall, I tried a filled bread that was delicious. Perfect for a hot day with a salad. I tried to recreate it at home, and we think it is very close. I made it with too fillings: zucchini and spinach.


Filled bread (6 portions)

250 grams of flour
1/4 teaspoon of salt
100 ml of water and a little bit more until having a dough that can be rolled pin
2 tablespoons of sourdough

Mix all together and let it rest for 60 -90 minutes


Zucchini or Spinach and cheese

3 zucchini or 180 grams of fresh spinach
70 grams of grated mozzarella cheese or any cheese that can be melted
A mix of chopped cilantro, mint, parsley, green onions and 1 garlic clove

Grate the zucchini (for the spinach just chop it), and mix it with the grated cheese, cilantro, mint, parsley, green onion and garlic clove.


Divide the dough in 6 equal balls. Roll each one until is very thin. Place a portion of the mix in a half, and fold it. Close it properly. Proceed with the remaining ones.


In a pan, brush it with a little of olive oil. Heat it a medium high. Place one bread 1 minute and 30 seconds per side. 



Serve it with salad or yougurt with mint....and enjoy it....It is delicious!
