Lentil and Rice with Feta...a Greek recipe
Very easy and tasty recipe....specially when you have only 100 grams of feta cheese and can't do much with that amount.
I have never been to Greece, but I love its food....one day I will be there....
Lentil and Rice with Feta
1 cup of rice
1/2 cup of lentils
2 garlic cloves
tomatoes (chopped in cubes)
Cook the rice until tender. Let aside. Cook the lentils with rosemary and bay leaf. Set aside.
Chop the onion and garlic, grate the carrot. Stir fry them with olive oil.
Mix the rice, lentils, and the sautee carrot and onion. Mix it with the chopped cilantro and mint and the tomatoes. Serve it warm with feta cheese on top. Enjoy!
