Pears with Mascarpone and Almond's Filling.....


When Anna posted her Pears filled with Clementines, I told her that her dessert remind me a Pear with frangipane that I ate a long time ago.......

Here is my version:

3 pears
Cinammon
Star anise
Sugar (Apologies, I did not measure it!)
2 egg yolks
1 cup of milk
2 teaspoons of corn starch
1 vanilla beans
60 grams of mascarpone cheese
50 grams of almonds (grinded)
Drops of almond essence

Peel the pears, and carefully take the flesh out. Place them in a pot with water, cinnamon,  anise star, and sugar (enough to make a sweet syrup). Cook the pears until tender, but firm. Let it cool. Keep the syrup.

Mix the mascarpone cheese with almonds, and add 1 or 2 drops of almond essence. Mix with pear syrup for sweetness and creamy consistency. I did not add more sugar, but if you want sweeter, then you can add icing sugar. With this cream, fill the cooked pears.

Mix one cup of milk, two teaspoons of corn starch,two egg yolks, the seeds of a vanilla beans, and one cup of pear syrup. Cook it until it has a creamy consistency. Let it cool.

Place this cream in a bowl, and put the cooked pear filled with mascarpone and almonds......ENJOY!!




Note: Next time I will cut the pears in half and make a big hole for the mascarpone and almond cream....I loved it!!
