Thanksgiving Dinner....time to Thanks!

Now, back to business....or back to the recipes....

After a long flu, and the preparation for the winter (snow has started so our house preparation for the cold days....brrrr!), we had enjoyed a simple but delicious Thanksgiving dinner. I wanted to cook more things, and had a long list of dishes that I couldn't make, but the flu slowed the cooking....

As you know, I am a grateful person....grateful for our life, our  family, our health, our job and your friendship. I feel blessed to have gone through this life journey with its positives and negatives days, because it has allowed me to realize that even in the worst moments there is always a reason to say Thank You!

For me , it is important to enjoy everyday and be positive that the future would be even better. This is the reason why I love Thanksgiving, is to have a special moment to share and to be consciously grateful for what we have, the food in our table, and all the beautiful things that will arrive to our life.....

During Thanksgiving, I try to cook as mush as possible with pumpkin, leeks, eggplants, apples, quinoa and all the winter veggies.

Since I saw the Apple Vichysoisse in Visc a la Cuina, I wanted to make it. Thanksgiving was the perfect ocassion..... My only twist was that I used herbs of Provence instead of rosemary flowers, and I add cooked quinoa for texture. DELICIOUS!!....Thanks Visc a la Cuina!
 

Pesto.... we love pesto! and I knew that this recipe would be a great success at home Croquetas de Pesto Thank you Yolincook.....We just loved it!!

We love eggplant and cheese......What should be better than fried eggplant with cheese? Thanks Cuchiflitos....it was mouthwatering
