For the cold days...Indian Food!....South Indian Style of Rice and Aloo Goobi...

It's cold again!.....Finally, we are having some normal cold winter. Thus, we have been enjoying Indian Food!.....one of our favorites



South Indian Style of Rice
2 cups cooked basmati rice
1 onion chopped
1 green chili chopped
1 dry red chili
4-6 curry leaves
1 cup tomato puree
4 cardamom seeds
1 tablespoon of coriander seeds
1 ½ teaspoon chana dal
1 ½ teaspoon urad dal
A pinch of asafetida
1 teaspoon mustard seeds
Oil
Salt

In a pan, roast the dry red chili, coriander sedes, chana dal, and urad dal. Set aside. Once it has cooled, grind it fine.

In a big pan, heat oil and add mustard sedes. When you listen they are popping, add the onion, green chili, and curry leaves. When the onion is cooked, add the tomato puree, cardamom sedes, and asafétida. Incorporate the spices, and mix well. Add salt. Cook it for 3 minutes, and add the cooked rice. Mix it well and serve…..ENJOY!




Aloo Goobi

3 cups of potatoes in cubes
3 cups of cauliflower florets
¾ cup of frozen Green peas
3 tomatoes in cubes
1 onion (chopped)
1 piece of ginger (3 cms)
2 garlics
2 green chillies chopped
1 teaspoon of cumin sedes
1 teaspoon turmeric
½ teaspoon red chili powder
1 teaspoon coriander sedes (crushed)
1 teaspoon garam masala
1 teaspoon fenugreek leaves
coriander leaves for decorating
salt
oil

In a mortar, crushed together the ginger (peeled) along with the garlic cloves.
In a big pan, heat oil and add cumin sedes. When they are popping, add the onion, and let it cook for 3 minutes; then, add the ginger-garlic paste, and let it cook for 2 minutes. Incorporate all the remaining spices. Add the tomatoes, ½ cup of wáter, and salt. Incorporate the potatoes, cauliflower, and green peas. Correct it for salt and spices. Let it cook at low-medium heat for 10-15 minutes until potatoes and cauliflowers are tender. Serve with rice, and decorate with coriander leaves. ENJOY!
