I love the sandwichs with leftovers of food and cheese ..... a piece of tortilla, some homemade roasted peppers and a good bread .... Dinner ready !!
Ciabatta (4 or 6 loaves)
450 grams bread flour
50 grams mother mass
1.5 grams dry yeast
7 grams of salt
360 grams of warm water
1/2 teaspoon of sugar
Olive oil for brush
Mix water with sugar and yeast, let froth. Mix flour, sourdough and yeast foam. Knead until you link all the elements. It is a slightly liquid mass. Brush a bowl with olive oil, put the dough and leave at room temperature 12 hours. I do it at night and I cook the next day.
Sprinkle the table with enough flour and stretch your hand with the dough. Divide into 2 rectangles. Each rectangle bend it until forming a rectangle of about 20 cm. Divide in 2 or 3 each rectangle (in total 4 or 6 ciabatta). Leave on baking paper with enough flour and weigh 1.5 hours.
This dough is quite liquid
Cook in preheated oven at 225C for 20 minutes (or until golden brown) with a tray of water to give moisture .... enjoy
And I have already repeated this recipe for Hilmar's rolls ...they are delicious!
Those ciabatta rolls are simply perfect! You are an excellent baker :-))
