I love octopus....and I haven't had octopus for four years. In Canada, it was very difficult to buy it. I went to a seafood store, and I found a beautiful piece...and I couldn't resist it.
Of course, my choice was to have Pulpo a Feira, but What to do with the water where the octopus was cooked and the pieces that were left? Arroz caldoso!!
Octopus Arroz Caldoso in Cataplana
3 tablespoons of olive oil
1 onion chopped
2 garlic cloves minced
1 red bell pepper in small cubes
4 tomatoes chopped
1 bay leaf
4 cups of octopus broth
3/4 cup of white wine
2 cups of portuguese rice
3 octopus legs chopped
salt
cilantro
Heat the oil in the cataplana and add the onion, garlic, and bay leaf. Let it cook covered for 5 minutes. Add the bell pepper and the tomatoes. Let it cook for 5-7 minutes. Add the wine and the octopus broth and let it boil. Add the rice and close the cataplana. Let it simmer for 20 minutes at low heat. Add the cooked octopus for 5 minutes to warm it and not to make it harder. Serve it with cilantro on top.
I too LOVE octopus! Wish I could get some here with reasonable price. This looks so yummy!
