Calamari on Black Rice in Cataplana

Calamari on Black Rice in  Cataplana  

3 tablespoons of olive oil
1 onion chopped
2 garlic cloves minced
3 tomatoes chopped
1 bay leaf
3 cups of seafood broth 
3/4 cup of white wine
2 cups of  rice
250 grams of calamari
1 teaspoon of calamari ink
olive oil

Clean the calamari and slice them. In a a pot, add olive oil, and chopped garlic. When it is hot, add the calamari. Season it with salt. When calamaris are cooked, sprinkle some cilantro and set aside.

Heat the oil in the cataplana and add the onion, garlic, and bay leaf. Let it cook covered for 5 minutes. Add the  tomatoes, and the squid ink. Let it cook for 5-7 minutes. Add the wine and the broth and let it boil. Add the rice and close the cataplana. Let it simmer for 20 minutes at low heat. Serve it and add the cooked calamari on top.
