Lemon mousse with strawberries and eggs filled with guacamole




It is party season here....weather is around 28C, and it is so pleasant. I'm facing a time where we either have guests or we are invited for gatherings; thus, I'm looking for easy and tasty recipes.

I found an old recipe that I haven't done in years. It is easy, delicious, fresh, and you can use any topping that you have handy.

Lemon mousse with strawberries

220g condensed milk
4 big or 5 medium  lemons  (you can use more or less) zest and juice
450 ml of whipping cream 35% 
Strawberries or any other fruit to decorate

This dessert is easy, but at the same time it is tricky. You have to mix things in the right order to have the right consistency. It is about the chemical reaction between the lemon juice and the cream.

With a hand blender, mix the condensed milk with the lemon zest. Add the whipping cream and beat it until it starts to form soft peaks. Add the lemon juice, and stir it or mix it at low speed. Distribute in glasses. You will see that without gelatin or agar agar, you will end up with a soft creamy thick texture.

Chop the strawberries, and add small spoon of icing sugar. Leave it in the fridge for 1 hour to extract the juices. Place some strawberries on top of the mousse. ENJOY!






Eggs filled with guacamole

12 hard boiled eggs

Guacamole. I prepare mine with avocado, tomato, garlic, green chives, lime, jalapeno, salt, and olive oil.

Peel the hard boiled eggs. Cut them in half, and place the egg yolk in a big bowl. Add some guacamole, mix it with the hard boiled eggs. Place a spoon or two of this paste in each egg white hard boiled. ENJOY!
