Swiss Chard Gozleme


I love love love swiss chards....I love them just steamed with some drops of olive oil and lemon along with a boiled potatoes and hard boiled eggs.....that combination for me is heavenly!!

However, I have to make other dishes too....In 20 plus years in North America, I never found out a store or farmers market that sells good swiss chards....thus, I always plant them myself wherever I go...



I love them in tortillas.....


And in Gozleme too...I tried this dish in Kuwait, and I love it!!.....it was love at first sight....in Kuwait I tried it with spinach.....

Gozleme

Dough

450 g of all purpose flour

1 teaspoon instant dry yeast

1 tablespoon sourdough

30g olive oil

50 g plain yogurt

180 g of warm water or more if required

1/2 teaspoon salt

Stuffing

400 g swiss chard

1/2 teaspoon dried oregano

3 garlic cloves

1 egg

150g crumbled feta cheese

Olive oil

Wash and chop the swiss chard, and sautee them in olive oil for few minutes (half cooked). Set aside, and mix it with the oregano, chopped garlic cloves, egg, and feta cheese. Let it rest for the flavors to combine.







Mix all the ingredients of the dough, and let it rest for 1 hour. The dough has to be elastic in order to use the rolling pin. Take 120 grams of dough and with a rolling pin make it very thin. Place a portion of the filling, and fold it. With a small quantity of oil, cook it for both sides 3-4 minutes each side. ENJOY!!!

  2. I don't think I have ever tried Swiss Chard, but I am a fan of leafy green vegetables so perhaps it's time to give it a try.
