Foul Mudammas.....Egyptian Fava Beans Breakfast!


I love love love fava beans.....I love them fresh in salad, with olive oil, lemon, garlic and oregano, but since I visited Egypt, I fell in love with this humble and delicious dish....it has been my typical breakfast in every trip that I have made to the middle east.....

Foul Mudammas

2 cups of dry fava beans

1 cup of water

1/4 cup of olive oil

1 1/2 teaspoon of salt

1 garlic finely chopped

2 teaspoons of cumin freshly grinded

1 teaspoon of lemon juice.

Soak the fava beans in cold water for 24 hours. I change the water 3 times. Cook it in a pressure cooker for 25 minutes. Let the pressure goes off by itself. Check whether they are soft enough, or continue cooking them until they are soft and tender.

In a big pot, place the water, olive oil, salt and cumin. Add the fava beans and mash them. Correct it for salt and cumin, add the garlic and lemon juice. Stir it and let is simmer for 5 minutes.



Garnish

Feta cheese

Chopped tomatoes

Paste of 3 garlic, salt, olive oil and lemon juice (1 teaspoon). In a mortar, crush the garlic with salt, olive oil, and lemon juice.

Serve the foul in a dish, and garnish with tomatoes, garlic paste, and feta cheese. Serve it with mini cucumbers and green olives.....ENJOY!!!

  1. My husband (and his family) was born and lived in Egypt until he was 17 years old . Foul Mudammas was very popular. He never liked it when he lived in Egypt, but now he makes it frequently. He says it brings back memories of his childhood. Interestingly, my kids and grandkids all love it too. His family at it with chopped hard boiled eggs. Your recipe looks very traditional and delicious.

  2. My husband is from Cairo, Egypt and remembers eating Foul while he was growing up. Although he did not like it at the time, he does really enjoy it now because it brings back memories of his youth in Egypt. Our family, including kids and grandkids love it. My husband's family ate it with chopped hard boiled eggs and then in pita bread.

  3. I too LOVE fava beans. As a kid I ate lots of fried and dried spiced fava beans as an afternoon snack. Sadly, now my stomach can't handle beans very well.
