I make all the bread at home. Thus, when I received as a gift an electric grain mill, I started to plan and buy wheat berries to try breads. I can tell you, the taste of bread is different since it uses all the wheat berries without any refinement. The bread is sweeter, moister, and less soft....but I love it!.....I'm doing mixes with white flour and freshly milled flour, but this one is 100% freshly milled flour
Bread
500 grams of Soft White Winter Wheat Berries
150 grams sourdough starter 100% hydration
300 grams of water (I used a little bit more)
1 teaspoon of salt
Mill the wheat berries and set aside. Mix it with the water, sourdough, and salt. Knead it for 10 minutes. Let it rise at room temperature for 6 hours, and folding the fours sides every hour (6 foldings in total).
Place it in the fridge, and let it ferment for 36 hours.
Take it out of the fridge, and shape it. I made baguettes and mini balls. Bake it at 200C for 30 minutes or until well baked. ENJOY!!.
