Cheese Mousse with Strawberry Coulis or Fresh Raspberries
1 cup of heavy cream
1 cup Greek yogurt
1 package of white cream cheese
6 gelatin leaves
2 teaspoons of vanilla essence
Sweetener of your choice. I used monkfruit sweetener 8 teaspoons.
Strawberry coulis
Fresh Raspberries
Soak your gelatins in 1/2 cup of cold water. In a pot, warm the gelatin until is dissolved. Add the yogurt, vanilla, and the cream cheese. With an immersion blender, mix it well until you don't have any lumps. Add the sweetener and set aside. Beat the whipping cream until it is formed. Add the yogurt and cheese mix. Stir it softly. Correct for sweetener it it is needed. Place the cheese mousse alternating with either Strawberries Coulis or Fresh Raspberries. Place it in the fridge for 4 hours before serve it. ENJOY!!
Such a lovely and refreshing dessert! The colour contrast of red berries and creamy white mousse is stunning.

ReplyDeleteHi David!...a package is 226 grams of white cream cheese (Philadelphia cheese style). However, I would recommend making half of the recipe since this dessert is very fulfilling and you end up with about 8-9 glasses of dessert with the full recipe. I would start with 113 grams of cheese, 1/2 cup of yogurt and 1/2 cup of whipping cream. Abrazotes, Marcela
