I was told that along with Pardulas, Casadinas are a sweet pastry eaten in Easter in the Sardinia Island....
I have not been able to go there.....Some day maybe.....It is one of my dreams to visit that Mediterranean Island. In the meantime, we have eaten these sweets at home during this Easter....
Casadinas (adapted from http://www.ricettedisardegna.it/casadinas/)
For the dough:
400 gr of durum wheat semolina
100 gr of lard (I used butter)
Warm water as needed
For the filling:
500 g of ricotta cheese
100 g of sugar
Mix the flour with the lard and a pinch of salt, helping with a bit of warm water. Knead until dough is smooth, then cover with a cloth and let it rest for a few hours. In a bowl mix the grated cheese, sugar, eggs, raisins and lemon zest, mix well, adding a tablespoon (or two) of flour to the mixture to give the right consistency. Take the dough and roll out a thin sheet; cut out of discs of a diameter of about 10 cm and placed on each a spoonful of filling. Pinch the edges of the dough into five or six points to form the bowls, then placed the casadinas on a baking sheet lined with parchment paper and bake at 375 F for about thirty minutes. When they are golden, remove from oven and spread honey. ENJOY!
