I love to have home made cookies ready for enjoying with a cup of tea or a good coffee!
I always dedicate a day a month to bake 5 or 6 kinds of cookies, and I keep them in the freezer ready to eat!
Here I have some of our favorites....
Marzipan kisses (adapted from the book "European cookies for every occasion")
Dough
250 grams of almond flour
70 grams of sugar
1 egg
3 teaspoons of flour
a pinch of salt
a pinch of baking powder
Decoration
Whole almonds
Combine all ingredients in the mixer. Add water if necessary (not my case) until you have a soft and smooth dough. Let it rest 30 minutes in the fridge.
Make small balls with your hands. Place a whole almond on top.
Bake it at 350 F until golden. ENJOY!
Blueberry Surprise (adapted from the book "European cookies for every occasion")
250 grams of flour
125 grams of butter
70 grams of sugar
1 egg
1 lemon zest
a pinch of salt
a pinch of baking powder
Frozen blueberries
Combine all ingredients in the mixer. Add water if necessary (not my case) until you have a soft and smooth dough. Let it rest 30 minutes in the fridge.
Roll the dough with a rolling pin. Cut circles of 4 cm. Place a frozen blueberry and wrap it up.
Bake it at 350 F until golden. ENJOY!
Orange Medallions (adapted from the book "European cookies for every occasion")
Dough
300 grams of flour
150 grams of butter100 grams of sugar
1 teaspoon vanilla paste
1 egg
2 tablespoons orange juice
a pinch of salt
a pinch of baking powder
Decoration
Orange zest
Powder sugar
Combine all ingredients in the mixer. Add water if necessary (not my case) until you have a soft and smooth dough. Let it rest 30 minutes in the fridge.
Roll the dough with a rolling pin. Cut circles of 4 cm. Bake it at 350 F until golden.
Prepare a mix of powder sugar and water. With a brush, apply it on top of the cookie when the cookie is warm. Sprinkle it with orange zest. Let it dry. ENJOY!
